    Cows are better at turning grass into money than sheep.

    Sheep are more adept at turning marginal land into a profitable venture.

    And you get a return each year from the wool and finally the carcass.
    With beef you only have the one return from the carcass after 12-18 months

    Subsidised farming went out the window with Rogernomics.
    Which accounts for the lower sheep numbers.
    Most cattle in NZ are bound for the beef market and not for dairy.
    Dairy requires high quality pasture, plenty of stock water, irrigated
    pasture in most areas and a constant worker input.
    Sheep and cattle you can leave for a day or two without fear.
    Provided you use permanent stocking where stock numbers are tailored to
    a particular paddock.
    I preferred the rotational stocking where the stores and fat got the new
    grass and the beef came last cleaning up the roughage.
    Means more work but you get a better result

    HIdden subsidies - by expempting farming (and particular dairy) from
    emission controls / trading, there is effectively a subsidy for that
    industry. Its a bit like if bus companies were exempt from road user
    charges / petrol taxes - taxis would probably object to the unfair
    treatment. But unfair is what National do when their supporters are
    invovled. But by all means call it something other than a subsidy if
    you want JohnO - it just a deliberate quirk of government policy that
    reduces costs for people farming cows . . .
