    It's okay. Music has had enough silly formalities.
    Fiddle is a Germanic term and traditionally less
    prestigious than the Romance violin, but the
    difference is similar to that between pig and
    pork, i.e., not very much.

    What about the much-honored Knorr or Lipton
    dry mix? Strikes me it would make more sense.

    1/3 c Panko crumbs

    Really, any kind of crumbs.

    1/4 c Catsup
    1 tb Worchester
    1/4 ts Prepared mustard

    And some standard flavorings, all to
    be used to taste and with caution. I'd add
    thyme of course and probably use token
    quantities if any of the listed condiments.

    Title: Russian Meat Balls (Bitochki)

    1 lb Ground beef
    1 lb Ground veal
    1/2 c Chopped onion
    1/4 c Rendered kidney fat
    2 sl Bread, soaked in milk,
    -squeezed dry
    2 ts Salt
    Ground pepper
    Fine bread crumbs
    Butter or beef fat
    2 c Sour cream
    1/2 lb Sliced mushrooms, sauted

    Cook onion in rendered kidney fat until wilted. Mix beef, veal, onion,
    bread, salt and little pepper. Knead well and chill. Wet hands and form
    mixture into balls the size of golf balls. Roll in crumbs and fry in
    butter
    or beef fat until brown all over. Remove and keep warm. Add sour cream
    and
    mushrooms to pan. Heat. Pour sauce over meat.

    I agree, and it is what we would use -- and adding more liquid with it.

    We like Panko as a breading coating in a lot of applications. In
    meatloaf type of recipes -- I don't think it matters a lot.

    Title: BURGER PIZZA
    Categories: Main dish, Dish
    Yield: 4 servings

    1/2 lb Ground beef, lean
    2 1/2 Crackers, crushed
    2 tb Onion, finely chopped
    2 tb Celery, finely chopped
    1/2 Egg (or yolk only)
    1/2 ts Worcestershire sauce
    1/2 ts Oregano
    3 Mushrooms, sliced
    Pepperoni slices
    1/2 md Tomato, sliced
    2 tb Green pepper, chopped
    1/4 ts Pepper, freshly ground
    1/2 c Mozzarella cheese, shredded
    1/2 tb Parmesan cheese, grated

    Combine ground beef, cracker crumbs, onion, celery, egg, sauce, spice
    and mix well.

    Use a tinfoil pieplate, pat beef mixture into a patty. Scatter
    mushrooms, pepperoni, tomato and green pepper over. Sprinkle with
    pepper and top with cheeses.

    Bake at 350F 20-25 min until meat is no longer pink.

    4 servings: 2 protein, 1/2 fat & oils 3 g carbohydrate, 16 g protein

    Extra can be frozen in portions and reheated in the microwave or oven.

    Title: Cabbage Roll Casserole 2
    Categories: Casserole, Main dish
    Yield: 4 servings

    1 lb Ground beef
    1 Onion, chopped
    Salt and pepper
    1/2 c Cooked rice
    1 cn Tomato soup (10 oz)
    3 c Cabbage shredded

    Directions: Brown meat, add everything else but cabbage. Mix well. Put
    cabbage in a greased casserole. Ad the meat mixture and bake covered
    at 350 for 1 1/2 hours.
