Clafoutis aux raisins
categories: French, dessert
servings: 4
400 g black grapes
150 g flour
4 eggs
150 g powdered sugar
25 cl cream
50 g butter
1 pn cinnamon
1 pn fine salt
Melt 40 g butter and let cool.
Oven at 180C/350F.
Rinse and dry grapes; pick from the stalk.
Beat the egg yolks and two of the egg whites
together; mix with the cooled butter and the
sugar until smooth and uniform. Add the cream,
flour, cinnamon, and salt.
Beat the two resserved egg whites to soft
peaks and fold in.
Pour batter into a buttered clafouti pan, then
arrange grapes over. Bake 45 min. Let cool in
the mold. Serve warm or cool.
Note: If the mold is too deep, pour only 1 cm of
batter in the bottom of the mold and then bake
10 min, then add the rest of the batter and
arrange the grapes on top as before. Then bake
the remaining time as before.
