    with an hour or so on the ground.

    Burned garlic noodles
    categories: pasta, ingredient, Chineseish, main
    servings: 4

    200 g dried egg noodles
    2 Tb fried - almost burned - garlic
    3 dried red chillies, split
    2 onions, sliced thin
    2 Tb sesame oil
    2 Tb vegetable oil
    1 Tb soy sauce
    1 Tb white vinegar
    1/2 ts salt
    1/2 ts MSG

    Put a big pot of water to boil with salt. and 1 Tb oil.
    Add noodles, bwroken into lengths. Cook according to
    package instructionns minus a minute or until very al
    dente. Drain the noodles and shock with cold water.
    Stir gently to separate and stir in remaining oil.
    Cool as long as practical, preferably overnight,

    Crush garlic coarsely in a mortar and pestle.

    Heat the sesame oil in the wok until almost smoking and
    add the broken chillies and cook 1 min. Add the sliced
    onions and wilt,. At this point you could add finely
    sliced carrots, beans, or green peppers if you choose.
    Next comes the garlic, which only needs to be stirred
    around for a minute.

    Quickly run a fork through the noodles again to ensure
    that the noodles are not sticking together. Then add
    the noodles to the pan.

    Evenly sprinkle in the MSG, soy sauce, and vinegar and
    stir quickly and gently.

    Transfer the noodles to a bowl.

    This was an older guy; I think he's more researcher than doctor. He
    certainly had the bedside manner for the researcher job. I'm still
    looking.
