    Hello All,

    Yesterday I was cleared to go back to work on my right pinky. Doc said that nothing was broken. The reason my finger is not extending, he told me, was that the bone grew back at an upward angle instead of a lower angle. He told me to make my pinky my "nervous tic" meaning I should "play" with it to get it stretched out and working. I am going to hear about my knee tomorrow. I am sincerely hoping I can get back to work next week!

    Also, I received a letter from the bank who held the note on my Versa. They said that the loan has been completely paid off.

    It's rare that I get a red-letter day like that. ;)

    So here is to seeing everyone at the picnic this year. See, if there's no room at the inn, I can always sleep in my van now. :D

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Stuffed Artichokes
    Categories: Abfarr, Ffbb, Vegetables
    Yield: 4 Servings

    2 c Bread crumbs, seasoned
    2 c Parmesan cheese, shredded
    1/3 c Garlic powder
    1/4 c Parsley, dried
    2 tb Salt, kosher, divided
    1/4 ts Pepper, black, fresh ground
    1/2 c Oil, olive
    1/4 c Water
    4 ea Artichoke, whole
    2 tb Lemon juice, fresh squeezed
    4 ea Lemon slice
    1/2 ts Paprika

    Preheat oven to 340 degrees. In a large bowl, combine the bread
    crumbs, cheese, garlic powder, parsley, 1 teaspoon of the salt, and
    the pepper. Add the oil and water and stir to combine. The mixture
    should be moist and loose. Set the filling aside.

    Trim the tops of the artichokes by about 3 inches. Trim off the
    stems, and trim the tips of any remaining leaves. Place the
    artichokes in an 8-quart pot and cover with water. (The artichokes
    will float.) Add the remaining 1 teaspoon salt and the lemon juice to
    the water. Bring to a boil, cover, and cook until tender, 20 to
    25 minutes.

    Remove the artichokes from the water and let them cool upside down.
    Once they are cool to the touch, squeeze any remaining water out.
    Scoop out the middle to remove the fuzzy choke. Slightly push the
    leaves apart.

    Place the artichokes in a 9-by-13-inch glass baking dish. Evenly
    divide the filling among the artichokes, making sure to get some in
    between the leaves. Top with lemon slices and sprinkle with the
    paprika. Pour just enough water in the dish to cover the bottom of
    the artichokes. Cover with foil and bake for 25 minutes. Remove the
    foil and continue baking for another 10 minutes. Let cool slightly
    before serving.

    manage to track down your hit & run driver.

    That'll work as long as you have screens for the openings that ventilate
    you sleeping spaces. Even if the skeeters don't eat you alive their

    Title: Mosquito Cafe's Grilled Grouper w/Nectarines
    Categories: Seafood, Fruits, Vegetables, Citrus
    Yield: 4 Servings

    1 Red bell pepper; cored,
    -seeded, in thin strips
    6 Nectarines; ripe, firm,
    - pitted, in thin slices
    1 md Red onion; thin sliced
    1/2 ts Garlic; minced
    3 tb Fesh basil; chopped
    1/4 c Red wine vinegar
    1/4 c Orange juice
    1/2 c Extra-virgin olive oil,
    +=PLUS=+
    Extra for brushing
    Kosher salt
    1 ts White pepper; fresh ground
    6 Grouper filets OR mahi mahi,
    - orange roughy or swordfish
    - 8 oz ea
    Black pepper; fresh ground
    2 bn Asparagus
    Peach Pecan Couscous

    In a pot of boiling water, blanch the asparagus for 3
    to 4 minutes. Remove and chill in cold water. Set aside.

    In a bowl, toss the bell pepper, nectarines, onion,
    garlic, basil, vinegar, orange juice, 1/2 cup of the
    olive oil, the kosher salt, and white pepper. Set the
    relish aside in the refrigerator.

    Prepare peach pecan couscous.

    Pat the fish filets dry, brush generously with olive oil,
    and season with the salt and black pepper.

    On a oiled rack set 5" over glowing coals, grill the
    filets. Cook over moderately high heat for 4 to 5
    minutes on each side or until opaque in center.

    Brush the asparagus with oil and reheat on the grill.
    Transfer the filets to 4 plates and top with red onion
    relish. Serve with the Peach Pecan Couscous and the
    grilled asparagus.

    Makes 4 servings.

    When you're working on the "uninsured motorist" side of the policy you
    are at the mercy of the skinflint accountants. And adjusters will try
    to chivvy you into settling for less than your "due" even if the other
    party was insured. They get a commission on all they can settle for
    "under par". I once forced an insurance company to pay up for some
    custom metal and paint work that had been damaged by their driver. But,
    I had to threaten to take them to the department of insurance. Once I
    did that they got very "sweet". Bv)=

    As long as it's not a "hot sheet" place. Georgia and I got one of those
    at a Clean Dave picnic once. Lots of coming and going all night. OY!

    Title: Mrs. Hooker's Coffee Loaf Cake w/Special Coffee Frosting
    Categories: Desserts, Cakes, Nuts, Chocolate
    Yield: 1 Cake

    3/4 c Butter; softened
    2 1/4 c Brown sugar
    3 oz Unsweetened chocolate;
    - melted
    3 c Flour
    4 ts Baking powder
    1/2 ts Ground mace
    1/2 ts Ground cinnamon
    1/2 ts Salt
    1 c Strong black coffee; cold
    4 lg Eggs
    2 c Chopped walnuts; for topping

    MMMMM------------------SPECIAL COFFEE FROSTING-----------------------
    1 c Very strong black coffee
    1 tb Vanilla
    Powdered sugar; as required
    - (about 1 pound)

    Set oven @ 350°F/175°C.

    Grease and lightly flour a large (9" X 5") loaf pan.

    Put butter and brown sugar in a large wooden mixing bowl.
    Beat together until they are nicely creamed. Stir in
    melted chocolate.

    Sift together in a separate mixing bowl the flour, baking
    powder, mace, cinnamon, and salt. Stir this in with
    ingredients in first bowl, alternately, with cold coffee.
    Drop in eggs, one at a time, beating each in thoroughly.
    Set aside momentarily. Put mixture in prepared pan.

    Bake at 350°F/175°C about 50 minutes. When done, let cake
    cool in pan.

    MAKE THE FROSTING: Put cold black coffee and vanilla in a
    wooden mixing bowl. Beat in powdered sugar until mixture
    becomes stiff enough to spread.

    Turn cooled cake out on plate. Spread Special Coffee
    Frosting liberally on top and sides of cake. Sprinkle top
    of cake thickly with chopped walnuts.
