    Title: Shahee Polo (King's Rice)
    Categories: Asian, Lamb/mutton, Rice, Vegetables, Nuts
    Yield: 10 Servings

    1/2 c Corn oil
    4 c Onions; chopped
    4 lb Baby lamb; in 3" pieces
    - w/bone
    2 lb Carrots; in 2" julienne
    1 c Dark or light raisins
    1 c Pistachio nuts; shelled
    3 Heads garlic; cloves
    - separated, not peeled,
    - rinsed in water
    4 c Raw rice; well rinsed
    3 1/2 c Water; warm
    2 ts Salt; to taste
    1 ts Pepper

    The extravagantly seasoned & adorned King's Rice is so-called because,
    according to the Afghan Jews, it is fit for a king. It is a very
    expensive preparation, served only on ceremonial occasions such as
    Bar Mitzvahs, holidays, & for special guests. It is not an everyday
    kind of rice. Nor is the lamb an ordinary baby lamb! The sheep most
    often seen in Middle Eastern or North American are a special breed (I
    called them fat-tail sheep) w/ such a fat tail that it might drag on
    the ground. The tail is a prized source of cooking fat. (The lambs
    are usually fattened at home.)

    Heat oil in pan large enough to contain all ingreds. Add onions &
    stir-fry over moderate heat for 2 mins. Add meat & brown for abt 15
    mins. Remove the meat & onions to platter or a bowl. The balance of
    the oil remains in the pan.

    Cover the bottom of the pan w/half the carrots to protect meat from
    scorching. Over this, arrange the meat & onions. Cover w/ the balance
    of the carrots. Sprinkle w/pistachios & garlic cloves over all.

    Add the rice to cover other ingreds & carefully pour in water, salt, &
    pepper. Bring the liquid to a boil & simmer for abt 10 mins, or until
    the liquid is absorbed by the rice. Stir top of rice lightly to mix
    but do not disturb other ingreds. Turn heat to low, cover the pan, &
    cook for abt 1 hr w/out stirring.

    Serve the polo w/salads, pickles, & Afghan bread.

    Serves 10.

    VARIATION: The polo can be prepared w/chicken & boneless beef chuck
    or ribs of beef. Stir-fry 15 pieces of chicken (legs, thighs, &
    breast) or 4 lbs beef, w/onions as in the basic recipes; all other
    steps are the same. The beef will take longer to tenderize & it is
    suggested that it be cooked w/onions in a covered pan for 20 mins
    before moving on to the next steps.

    Thursday, September 26 (mid afternoon, on) to Monday September 30
    (final departures). You're welcome to any and all of it you can make. I
    just wanted to get an idea of about how many people to expect on
    Thursday and if you wanted to go out or have supper at the house. Any

    chain; they have a couple of places in Mount Airy plus the one in Wf.
    Steve had a fajita bowl; I had a mix of scallops, shrimp, chicken,
    summer squash, mushrooms, onions, tomato, bell pepper, and broccoli over
    rice and a cheese sauce over that. We both took about half of our meals
    home, stopped at a Cold Stone Creamery for ice cream on the way.

    others in the group, see if there's an interest in a change of

    Mine was very good--the seafood in the Chinese meal was just a bit over
    done but this was done just right. Scallops were just about melt in your
    mouth tender.

    smoker will be in use or not. We do have the electric smoker but Steve
    prefers the pellet smoker now. He did a Boston butt (pulled pork) for
    today's LG yesterday that was enjoyed by all but maybe some of the kids.

    It was; we did it with home made cole slaw, boughten potato salad,
    strawberries with angel food cake and whipped topping. Brought back a
    bit of meat, whipped topping and strawberries, one piece of cake, and
    some potato salad & cole slaw.

    Yes, and looks iffy for a trade out now but have to check back

    regularly scheduled family has a group meeting with the youth
    leader in that time. No problem for us to do so, especially with
    a couple week's advance notice.

    begin with. When I reheated the meal, I did it on a very low setting,
    basically enough to just warm it, not really cook it any more.

    Steve's folks for tonight's supper. Mom made potato salad and I did my
    maternal grandmother's green beans (with bacon and vinegar). A bit of
    sliced cucumber and tomatoes, apple pie for dessert and good eating all
    around.

    families you may not see or get to to talk with for a while,
    then RH>> when you see them, the kids have all grown at least 6
    inches.
    When it comes to the teenagers, that can happen from week to
    week! NB>> It still can come as a surprise how quickly the time passes....

    I know, kids that weren't even in school when we came to the church
    are now in high school. Then too, our oldest grandson has his learner's permit--we were there when he was born.

    Our intern has been worshiping with us for a little while before
    we could hire him as an intern... when they first came, there
    were NB>> just two kids, and soon after they had their third.... this year, NB>> they had their fourth, and already he's starting to look
    like a
    little person... :)

    They grow up all too fast. The baby that one of the church families
    had in December is now 6 months old.

    Yup, time passes... and the older we are, the faster it seems.... :)

    Very much so. Big sister will be three in August, big brother turned 7
    in March--we've been here since before any of them were born.

    All in the interest of good food. We brought a bag of pulled
    pork to Steve's folks for tonight's supper. Mom made potato
    salad RH>> and I did my maternal grandmother's green beans (with
    bacon and
    vinegar). A bit of sliced cucumber and tomatoes, apple pie for
    dessert and good eating all around.
    Sounds quite tasty.... :)

    It was; we took the last of the pie back to the camper for breakfast.

    crust.

    eat at a reasonable hour. Next time we have the same situation
    tho, Steve will cook them on something else.

    off on the Elder family camping week which starts Saturday.... Got a

    now... what doesn't get done goes with me to work on there... ;)

    We knew one family wasn't going to be there, found out 2 more people
    couldn't make it at the last minute. We were able to adjust the cooking
    so as not to have a lot of "use right away" left overs--extra beans into
    the pantry, greens into salad, tortillas into the freezer, etc. Nice
    flexible meal. (G)

    Quite so. Another family had #2 (#1 was born before they moved
    here) just a few days after Audrey was born. He turned 8 in
    April, just a few weeks after becoming a big brother to #6.
    Reminds one of the song from Fiddler... Sunrise, Sunset... :)
    One of my favorites. I saw the movie for the first time (but not
    the RH>> last) while in college.
    I've seen it a few times also... and listened to the soundtrack
    recording many more times... ;)

    in the huge packet I downloaded when I got home... :) We did
    have fun, catching up with each other... not really so many
    goodies this year... fewer people showed up this year than in
    other years, and of those, a fairly significant percentage
    only came on a day trip, or to drop off their kids to be there
    (under grandparent supervision)...

    Good to see everybody, even if it is just for a short time.

    Very true... I missed my cousin & family... they showed up on the
    first day as a day trip, and were only at my sister MG's campsite... I never
    was told they were there until after the fact... at the time, I was in
    my cabin getting settled, I think...

    We cooked for LG yesterday, ended up only being 2 others
    besides Steve and me. Did a taco salad with blueberry cobbler
    (local berries) for dessert. Cobbler was enhanced by vanilla
    ice cream--yummy!
    Had you known ahead of time how few people there were to be
    there...? Sounds like a fairly simple and easy meal... :) Did
    you have lots of leftovers....?

    Camping was the only way we could afford a family vacation. Dad's pay
    (and Mom's, once she started working) couldn't cover motels,
    restaurants, etc. We saw a lot of free stuff, and his press pass let us
    get into more at a reduced rate.

    Helps that most of your family is concentrated in one area. Steve and I
    have been the furthest away from the rest of the family most of the
    time. One of Steve's brothers was in CA for a few years but came back
    and settled near the rest of the family. I have a sister in AZ but she
    moved there in the mid 90s; we lived in NC before the rest of the family
    moved anywhere else.

    ANNUAL PICNIC

    The Fido Cooking echo annual picnic week end is set for September 26-30
    this year in Wake Forest, NC at the home of Stephen and Ruth Haffly. You
    are welcome to come for any (beginning mid afternoon on the 26th) or all
    (thru good byes on the 30th). Thursday night's meal will be provided by
    the Hafflys, Friday night's meal will be at a local restaurant (most
    likely a Southern cooking cafeteria). The official picnic day is
    Saturday, leftovers day is Sunday. Activities include (but not limited
    to) cooking, eating, talking, possibly the local farmer's market on
    Saturday morning, church for those interested on Sunday morning and more cooking, eating, talking, etc.

    days, by having had some good blocks of time the last few days... :)

    I usually curl up in my chair to do Fido--easy to get to other areas of
    the house that need attention. I'm just steps away from other rooms,
    kitchen being the closest. Until we moved to WF, I did all of my
    computer work on a desk top set up. We didn't have the room, either in
    the rental, or this house, for 2 desk top set ups so I opted to go with
    the net book/lap top for most all of my work. I've had to use the desk
    top set up from time to time but prefer the portability of the way I use
    the set up now. It's also easier to travel with. (G)
