One could imagine a molecular chef doing
something rude like making a wobbly gel
that tasted like a steak. It's the sort of
clever irritating thing one might do.
Not sure that I want to imagine that.... :) Not even as a substitute
should one be toothless and want something resembling a steak....

Those gastropeople aren't playing to the likes
of us. Myself, I'd prefer something that crunched
like a potato chip and tasted like a steak.

week), and when she had me sample one, asking how
she could make them better, I said cut the soda in
half, but they were okay to serve at the post-concert
reception on Sunday, but, not taking criticism well,
she was incensed at my thinking it was okay to serve
to guests, tearfully threw them out, wasting a pound
of butter and nearly that in molasses.
That's a bit over-reactive... After all, you didn't say they were bad,
just that next time they could be better.... ;)

She used to teach psychology and music at Longy. Social
scientist and musician at once. Temperamental much?

A couple days later she made the cookies with 1 scant
ts of soda instead of 2 ts, and they were really good.
Now she's making peanut butter cookies which call for
only 1/2 ts of soda for a similar amount of flour; why
Betty Crocker makes that stupid distinction I can't
guess, unless the 2 ts is an age-old misprint for 1/2 ts,
perpetuated through hundreds of editions, borrowings,
    and plagariasms over the years.
That does sound like a possibility.... :)

Yesterday, in a modest overreaction, she made yet
another batch of those spice cookies omitting the
soda altogether. Turns out they were among the best
hermitoid things (not hermits - no raisins) I've had.

The other day we were sitting around at Helen's
house making jokes about a Haydn piece that is in
D major and B minor at the same time, and I could
see a casual overhearer wondering about our bizarre
    jargonistication.
    Indeed. :)
... For people who like peace and quiet: a phoneless cord.
    Now there's an idea.
It has a certain appeal to it.... particularly on the days when the
phone rings off the hook with stupid calls.... ;)

Sometimes deafness would seem to be a boon.

... Did you expect mere proof to sway my opinion?

    Molasses Crinkles
    categories: cookies, be careful
    yield: 1 batch

    3/4 c shortening
    1 c packed brown sugar
    1/4 c mild-flavor molasses or full-flavor molasses
    1 egg
    2 1/4 c all-purpose flour
2 ts baking soda [M says use 3/4 ts at most]
1 ts ground cinnamon {M says double it]
    1 ts ground ginger
    1/2 ts ground cloves
    1/4 ts salt
    granulated sugar
    water

Mix shortening, brown sugar, molasses and egg
thoroughly in large bowl. Stir in remaining
    ingredients except granulated sugar. Cover
and refrigerate at least 2 hr.

Heat oven to 375F. Grease cookie sheet. Shape
dough into 1-1/4" balls. Dip tops in granulated
sugar. Place balls, sugared sides up, 3" apart
on cookie sheet. Sprinkle each with 2 or 3 drops
    of water.

Bake 10 to 12 min or just until set but not
hard. Remove from cookie sheet to wire rack.

Not quite a given.... After all, I'm both a counselor and a musician
(including teaching piano), and I don't think I'm all that
    temperamental... :)

So maybe now she'll just leave out the soda....?

Indeed. SOW, has Bonnie explored the possibility of cochlear
implants....? I've a friend who was profoundly deaf that got them, and
found it helped immensely.... and I was recently reminded that they are
not just for those who've been deaf all their life.... and thought of Bonnie.... ;)
