I've probably prepped for most of the regular members here,
certainly for all who have attended the echo pics.
we're considering hosting this year--the week end after Labor Day
(which we've done the past couple of years) seems to be a good
time frame. Arrive Thursday, official picnic on Saturday?
Friday outing, Sunday leftovers, Monday abandoning you.

That would work; we have the camper as a "guest cottage" for probably
2 people (short queen bed and a 3/4 size pull out using the couch and
    an extra coushion).

Dibs on the queen bed in the camper... (G)

Steve has a new pellet grill/smoker plus the electric
smoker and "green egg" (not the real one, a different maker)
so, if the weather is good, we can do a lot of outdoor cooking.

You are well equipped now... :)

We'll just have to watch out for a hurricane blowing up; it's
    still that time of year.
    There's no predicting, of course.

I know, but the past couple of years there's been an early September storm. First one missed the area, last year Florence did a lot of
damage to the eastern part of the state, less to our area but we did
    get some.

Wherever we are, and pretty much whenever, there's always a chance of
    inclement weather.... ;)

MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: PLUM TOMATO TART
    Categories: Appetizer
    Yield: 40 Servings

    1 lg Egg white
    3 tb Olive oil
    6 Phyllo dough sheets (14x18")
    5 ts Breadcrumbs; dry
    1/3 c Dijon mustard
    1/4 c Parmesan cheese; freshly
    --grated
1 lb Plum tomatoes (about 8)
    2 tb Parsley; fresh (chopped)
1 ts Thyme; fresh, or 1/2 t drie

Set oven rack on the upper level; preheat to 400 degrees F.
Lightly coat a baking sheet with nonstick cooking spray or line with
parchment paper In a small bowl, whisk together the egg white and 2
Tbsp. olive oil. : Lay a sheet of phyllo on the prepared baking
    sheet, and with a pastry
brush, lightly coat the surface with the egg-white mixture. Sprinkle
with 1 tsp. breadcrumbs. Repeat this step, layering 4 more sheets of
phyllo on top and brush with egg-white mixture. To form an edge to
the tart, carefully roll over the edges toward the center, using the
blade of a knife to help you get started.
: With a rubber spatula, spread mustard over the surface of the
dough and sprinkle with cheese. (The tart can be prepared ahead to
this point. Wrap and freeze for up to 2 months. Do not thaw before
continuing.) Arrange tomato slices on top in 5 rows of 8 slices each.
Bake for 15 to 20 minutes, or until the pastry is golden brown. Let
cool in the pan for 5 minutes. In a small bowl, combine the remaining
1 Tbsp. olive oil, parsley, garlic and thyme. With your fingers or a
fork, dab some of the herb mixture onto each tomato slice. Slide the
tart onto a serving platter or, if you wish to serve bite-sized
appetizers, slide it onto a cutting board and with a sharp knife or
pizza cutter, cut the tart into squares between the tomato slices.
Serve warm or at room temperature.

It would cost a bit more, but there is also the Lion's Gate Bed and

You could also see what comes up on AirBNB. I checked and there are
several options including an entire townhouse with 3 bedrooms and can
have up to 6 guests for $124/night. There are less expensive options
    also.

Title: Filo Pastries with Smoked Turkey and Mushrooms
Categories: Snacks, Appetizers, Low cholest, Low cal
    Yield: 15 servings

    1 c Minced mushrooms
    2 Cloves garlic -- minced
    1/4 c Minced onion
    1/4 c Sherry
    1 ts Olive oil
    3 tb Chopped parsley
    1/2 c Crumbled feta cheese
    1/4 c Grated low-fat mozzarella
    -cheese
    1/4 ts Dried oregano
    1/4 ts Dried thyme
1/4 lb Finely minced smoked turkey
-or ham -- trimmed of fat
    15 Sheets filo dough
    1/3 c Unsalted butter -- melted

    1. In a large skillet over medium high heat, saute mushrooms, garlic,
and onion in sherry and olive oil until soft. Add parsley, feta,
mozzarella, oregano, thyme, and turkey. Remove from heat.

    2. Preheat oven to 350 degrees F. Lightly oil two 9- by 12-inch baking
    sheets.

    3. Lay filo dough on a clean, dry surface. Cut each sheet in half
widthwise to make 30 smaller sheets. Stack them evenly on top of each
other, and cover with a piece of plastic wrap and a slightly dampened
dish towel as you do the next step.

    4. Butter 1 sheet and cut into 3 long strips. Lay the 3 strips on top
of each other. Place about 2 tablespoons of filling in the lower right
section near the edge. Fold bottom right corner of filo over filling
to meet left edge, creating a small triangle. Continue folding
pastry, as you would a flag, until you reach the top. You will end up
    with a triangle-shaped pastry.

    5. Lightly butter top of filled triangle and place on prepared baking
sheet. Repeat process until all the filling has been used.

    6. Bake pastries until golden (20 minutes). Serve warm.

    Makes 30 pastries.

NOTES : Spoonfuls of savory filling are layered on thin filo dough,
which is then folded into triangles. Prepare the pastries ahead and
    freeze for entertaining.

I'll do a search on those three. Need to have your address to check
on distance from your place to a motel/hotel (email to me is fine). I just saw that Michael is leaning towards the Hampton. He would

I'll send the our address in an e-mail but most everything in town is probably 10 minutes or less from where we live. WF is growing but
there's still a lot of small town feel to it.

    Got it -- thanks.

And if you've done any looking, you'll see that we've got a good assortment not that far away.

All of the ones you mentioned are within a ten minute drive according
to Google maps. When it gets closer to time, we'll research the
    various
    features to decide.

Sounds good to me. I'm not aware of anything special planned in town for
that week end that would fill up the motels so you should find room at
the inn. Farmer's market will still be going strong on Saturday, worth wandering down to take a look at, if you're interested.

That would work; we have the camper as a "guest cottage" for
probably 2 people (short queen bed and a 3/4 size pull out
using the couch and an extra coushion).
Dibs on the queen bed in the camper... (G)
OK, we'll reserve that one for you.
Thanks... :) I don't mind sharing the rest of the space...

Space for another person to sleep there, plus kitchen space.

    Yup... :)

Steve has a new pellet grill/smoker plus the electric
smoker and "green egg" (not the real one, a different maker)
so, if the weather is good, we can do a lot of outdoor cooking.
You are well equipped now... :)
Quite so, we also bought a fire pit today so we can make
    s'mores. (G)
Dunno if I've ever had s'mores at an echo picnic before... ;)

    True... :)

did a lot of damage to the eastern part of the state, less to

we're considering hosting this year--the week end after Labor Day
(which we've done the past couple of years) seems to be a good
time frame. Arrive Thursday, official picnic on Saturday?
Friday outing, Sunday leftovers, Monday abandoning you.

We'll just have to watch out for a hurricane blowing up; it's
    still that time of year.
    There's no predicting, of course.

I know, but the past couple of years there's been an early September
storm. First one missed the area, last year Florence did a lot of
damage to the eastern part of the state, less to our area but we did
    get some.

Wherever we are, and pretty much whenever, there's always a chance of inclement weather.... ;)

Yup. I'm nominially on for this one as is Sean (pretty sure it was him).

It's more like if I can take Friday off so drive down Thursday. Possibility of sudden change (work related) but not that likely I will have to travel just then.

Will do--checked out Sleep Inn already. They are a totally smoke free
place so wouldn't work for you. The other 2 I listed above are a bit
pricier, don't know yet what their policies are. I'll also check on the possibility of a military discount.

There's still one bed available in our camper but that's also 100% smoke
    free, as is the house.

We're this close [], hopefully you will be able to make the picnic this

    Hi Nancy,

buy ice as needed for them.
    That would work... :)
We'll have to fit coolers, etc in and around, wherever we can.
But not where people will trip on them... ;)

For sure, no! If it's good weather, they can go out on the deck.

    That should work... :)

I think Steve is going to try to rig up some sort of shade tarp for the
week end over the deck. Should help also if we have rain.

    No reason at all... :)
    Unless it's dumping down rain.
Well, yeah, that would certainly put a damper on things... :)

But, we know it won't be snow. (G)

    Most likely, not, anyway.... (G)

Unless we put up some sort of canopy over the fire pit area.

    We've got time... ;)
And we'll be doing a lot of looking in the next few months.
And no doubt having a lot of fun doing it... :) When I was
looking, I had lots of choices already and had to whittle it
down... and then make sure that my final choices would be able
to accomodate our group on a possibly busy Friday night.... :)

Have to see what the final head count is before we make a final
decision on where to go. A couple of places are small but the food is worth it--if we can make a reservation. Time will tell.

    Indeed it will... :)

So far it looks like a small-ish group again.

There are several in WF that aren't too far from where we live. Do
you want something like Sleep Inn, Courtyard by Marriott or Hampton
Inn? I know that those 3 are in WF, have to keep my eyes open for
    what else is available.

If you can find one ot too ratty that has smoking rooms, let me
    know?

We have booked a moderate townhouse via Orbitz, about two miles from Ruth's house. Cost was about the same as the Hampton. Everything we
looked at was a no smoking facility -- most are these days. I thought
that you were trying to quit -- or was that just Janis?

THey found one for me. Quite workable. The way to quit is not to suddenly get a non-smoking facility.

Will do--checked out Sleep Inn already. They are a totally smoke free place so wouldn't work for you. The other 2 I listed above are a bit pricier, don't know yet what their policies are. I'll also check on the possibility of a military discount.

There's still one bed available in our camper but that's also 100% smoke free, as is the house.

We're this close [], hopefully you will be able to make the picnic this year.

Should work! On the smoke free, I do not mind at all smoking outside. What I find untenable is when a place says you can't even smoke outside or in your own car in the parking lot. I figure at your place, I'll just take a break and smoke in my car now and again.

My sister, a heavy smoker, had that problem with our daughters' high

had to go several hours without. First time she and family came to visit

have the curtesy to go outside at our place.

outside or in your own car in the parking lot. I figure at your place, I'll just take a break and smoke in my car now and again.

No problem, and if the weather is nice enough, we've enough yard space
that you can smoke in the fresh air. We'll probably have a couple of
smokers and a grill going anyway, maybe the fire pit later on in the

No fun. My Fido was down on Monday but back up the next day. I don't

What this town needs are a few reasonably priced B&Bs. With the seminary

of things last year but major construction jobs still need them.
Which is as it should be... :) Not just for the town's revenues,
but also a way of keeping quality up... :)

Making sure the job is done right.

    Exactly... :)

Unless we put up some sort of canopy over the fire pit area.
    That could work....
After we figure out where to put the pit, and how to arrainge
    seating.
True... that would need to come first... :)
May have to sit elbowtoelbowtoelbow if it's raining. (G)
Or send someone out, as a designated marshmallow roaster... ;)

Special order marshmallows? It sounds like something Steve or Michael would do. (G)

    Probably... :)

So far it looks like a small-ish group again.
I'm counting 6-8 at the moment.... more could decide to come in
the meantime, though... maybe my brother will be close enough,
if he's not off on some project far away... I'll at least let
him know when it is.... ;)
OK, your count is about what I'm getting. It would be nice if
your brother could come also--how far from WF is he?
He lives in the Tri-Cities area where Sean is... in Bristol
VA/TN to be exact.... He could be on a project closer,
though... or one much farther away.... :) I need to call him
    sometime soon... :)
    OK, sounds good.
I talked to him Friday... He said to send him an email with the
details, but that it is too early to tell whether or not he'd be
available... He did say that he'd be glad for it to work out...
He did enjoy the picnic he got to part of, at Shipps... ;)

OK--earliest arrival time is Thursday afternoon, September 26.
Shopping, sight seeing, etc with dinner out on Friday. Picnic on
Saturday, time TBD. Sunday the 29th--assemble about 12:30 for left
overs, etc. Final split of left overs, farewells on Monday, September
    30.

    I'll pass that along... :)

Of the group, I can see those two being the most apt to do special order marshmallows.

I talked to him Friday... He said to send him an email with the

OK, I'm also sending it to xxCarol in this packet.
