    In a medium saucepan bring water to a boil

    low and cook until al dente, about 20 min.
    Remove from heat, drain rice, and cool.

    Oven at 400F.

    Beat eggs. Add sugat and vanilla. Beat in
    ricotta until smooth. Stir in milk and
    cooled rice. Pour into ungreased 9" baking
    pan. Sprinkle with cinnamon. Transfer to
    oven and bake until center is almost set,
    50 to 55 min.

    Remove from oven and let cool on wire rack.
    Refrigerate. Serve cold.
