    Title: Baked Eggplant Italiano
    Categories: Italian, Spam, Cheese, Eggs, Wine
    Yield: 4 Servings

    1 Eggplant
    Salt
    Flour
    2 Eggs; well beaten
    Cooking oil
    1 1/2 c Shredded mozzarella cheese;
    -divided
    1 cn Spam luncheon meat; diced
    1 c Marinara Sauce
    MARINARA SAUCE:
    1/4 c Chopped onion
    2 tb Red wine
    1/4 c Chopped celery
    1/4 ts Basil
    1 Garlic clove; minced
    1/4 ts Oregano
    1 tb Pure vegetable oil
    1/4 ts Salt
    15 oz cn Tomato sauce
    1 Bay leaf

    Cut unpeeled eggplant lengthwise in 1/4-inch slices. Lightly salt
    and place on plate; place a baking pan filled with heavy cans on
    top of eggplant. Let stand 1 hour; drain off accumulated liquid.
    Dip each slice in flour, then into beaten eggs. Saute in oil in
    large skillet, a few slices at a time, until browned on both
    sides. Drain on paper towel.

    Reserve about 1/3 cup mozzarella cheese; combine remaining cheese
    with Spam. Spread about 2 tablespoons sauce over bottom of
    lightly-greased 1-quart baking dish. Cover with a layer of
    eggplant. Add layer of Spam mixture; spread with sauce. Repeat
    layers ending with sauce. Sprinkle with reserved cheese. Bake in
    400 degrees oven 15 minutes, or until mixture is hot and cheese
    melts on top. Let stand 5 minutes before cutting.

    For Marinara Sauce: In a medium saucepan, saute onion, celery, and
    garlic in oil. Add remaining ingredients and simmer 15 minutes.

    Nice to know: You'll have an extra cup of sauce. Freeze it and use
    another day for Rice Stuffing.

    Title: White SPAM & Garlic Pizza
    Categories: Pork, Breads, Cheese, Vegetables
    Yield: 1 pie

    1 (12") Boboli crust
    8 sl Provolone Cheese
    8 sl Mozzarella Cheese
    10 oz Ricotta Cheese
    12 oz Can SPAM
    12 cl Garlic; peeled (or more)
    1 c Grated Romano cheese
    1/2 c Jarred Alfredo sauce

    Lay your Boboli crust on your pizza pan. Spread a layer
    of Alfredo sauce evenly across the crust. Layer on the
    Provolone and cover it with the Ricotta. Then a layer
    of Mozzarella.

    Put the SPAM in chunks in a food processor with the
    garlic and whirl it until pasty/pureed. Apply the
    SPAM/gerlic paste over the Mozzarella. Sprinkle with
    the grated Romano.

    Bake in a 450°F/230°C oven until done.

    3 -minutes cooking time

    1 tb Butter
    4 Scallions; chopped
    2 c Chicken stock
    1 pk Unflavored gelatin
    1 c Chicken; chopped cooked
    1 c Ham; chopped, cooked
    1 tb Madeira
    1 c Heavy cream

    1. In a medium-size saucepan, melt butter over medium heat. Add
    scallions and cook 2 mintues. Stir in stock and gelatin. Simmer,
    stirring, until gelatin dissolves. Pour into a food processro.

    2. Add chicken,ham and madeira to processor. Process until smooth.
    Pour into a bowl, cover, and chill until almost set.

    3. Meanwhile, beat cream until stiff. Fold whipped cream into
    chicken and ham mixture and pack into a lightly greased 6-cup mold.
    Cover and refrigerate at least 2 hours, or overnight, until set.

    Title: Streuselkuchen (Crumb Cake)
    Categories: German, Cakes, Desserts
    Yield: 6 Servings

    1 x ----------topping-----------
    1/4 c Brown sugar
    1 c Flour; unbleached, unsifted
    1 x ------------cake------------
    1/4 c Sugar
    1 pk Yeast; dry
    1/2 c Butter or margarine
    1/4 c Sugar
    2 t Cinnamon
    1/2 c Butter or margarine
    2 1/4 c Flour; unbleached, unsifted
    1/4 t Salt
    3/4 c Milk
    1 ea Egg; large

    TOPPING: For topping, mix sugars, cinnamon and flour. Cut in butter
    until mixture is crumbly. CAKE: To make cake, mix 1 cup flour, sugar,
    salt and yeast in a large bowl. Place milk and butter in a sauce pan
    and heat until very warm (120 to 130 degrees F). Gradually add to
    dry ingredients; beat 2 minutes. Beat in egg and 1 cup flour. Beat
    on high speed for 2 minutes. Stir in enough flour to make a soft but
    stiff batter. Spread batter into a well-greased 9-inch square cake
    pan. Sprinkle with topping. Let rise in a warm place until double in
    bulk, about 1 1/2 hours. Bake at 350 degrees F. about 45 minutes or
    until done. Makes 1 9-inch square cake.

    I have multiple recipe bases. The big gun - Echomail - is for recipes
    I have posted in message replies or posts that I originated. It stands, currently, at 10,500 + recipes. Second biggest is Chileheads which is
    North of 7500 recipes from the Chileheads mailing list.

    Anyway I have a sub-directory in my MealMuncher tree named "IMPORT".
    I put formatted recipe files in there and leave the Meal Master set to
    look there when importing files to whichever base I have it logged on
    to.

    Title: Cranberry Moose
    Categories: Desserts, Fruits, Dairy, Citrus, Nuts
    Yield: 8 Servings

    20 oz Crushed pineapple
    1 c Water
    6 oz Strawberry flavoured gelatin
    16 oz Whole berry cranberry sauce
    3 tb Lemon juice
    1 ts Lemon zest; grated
    1/4 ts Nutmeg
    1/2 c Pecans; chopped
    1/2 c Sour cream

    Drain pineapple; reserve liquid.

    Add liquid and water to gelatin in saucepan, stir.

    Boil until gelatin dissolves; remove from heat.

    Blend in cranberry sauce, lemon juice, grated peel
    and nutmeg.

    Chill until mixture thickens slightly, then blend in
    sour cream.

    Fold in pineapple and pecans.

    Pour into oiled mold and chill until firm, about 2-4
    hours.

    Unmold onto serving plate.

    If desired, garnish w/mint leaves & fresh cranberries.

    Makes: 8 servings

    Title: Treet Sandwich
    Categories: Five, Pork, Vegetables, Cheese
    Yield: 6 servings

    1 c American cheese
    12 oz Can Treet luncheon meat
    - (NOT Spam)
    1/2 c Onion
    1/2 c Dill pickle
    2 tb Butter

    Grind all ingredients together. Mix well. Spoon into
    hot dog buns. Wrap in tin foil. Bake in preheated oven
    for 10 to 15 minutes.

    May add more pickles and onion to your taste

    I found a file named, oddly enough, all_spam.mm. On a whim I looked to see how
    many times the word "Title" was used. Hey it's better than actually trying to count them. The answer is 466. Now I've combed through those things a couple of times and tried to reduce the duplicates.

    Title: Chicken Parmesan On Country Ham
    Categories: Poultry, Meats
    Yield: 6 servings

    1/2 ea Stick butter
    1 ea Clove garlic, minced
    1 c Pepperidge Farm bread crumbs
    1 c Parmesan cheese
    1 ts Salt
    1/8 ts Pepper
    6 ea Half chicken breasts, boned
    6 sm Slices country ham

    Melt butter, add garlic and simmer. Mix crumbs, cheese and
    seasonings. Dip chicken breasts in butter mixture, roll in cheese and
    crumbs. Place each chicken breast in foil lined pan on top of a
    piece of country ham. Bake at 350 degrees for 1/2 hour, then 300
    degrees for 1/2 hour. This can be prepared the day before and
    refrigerated until time for baking.

    If the recipes are formatted for Meal Master you can import them and tell
    Meal Master to do a variety of things with the dupes it finds. That's
    the quickest way I know to sort a big file for dupes that I know.

    Title: Granny Peg's Treet Casserole
    Categories: Pork, Rice, Fruits, Pasta
    Yield: 4 servings

    2 tb Corn starch
    1 1/2 c (packed) brown sugar
    Pineapple juice from 13 1/4
    - oz can of pineapple
    1 c Water
    12 oz Can Treet luncheon meat
    2 tb White vinegar
    1 c Bell pepper; sliced
    2 c Cooked white rice
    1/2 c Chow mein noodles

    Place brown sugar, corn starch and pineapple juice and
    water in a pan. Cook, stirring constantly until clear
    and thick.

    Stir in a can of Armour Treet meat or Spam meat. Cut
    into 1" cubes. Add in the pineapple chunks and bell
    pepper slices.

    Cook until heated through, 10 to 15 minutes. Serve
    over hot rice and top with chow mein noodles.

    Serves 4

    Title: Breakfast Souffle
    Categories: Breakfast, Casseroles, Potatoes, Spam, Cheese
    Yield: 6 Servings

    1 pk (26 oz) frozen shredded
    -hashbrown potatoes
    1/4 c Vegetable oil
    1 lg Green bell pepper; chopped
    1 lg Onion; chopped
    2 Cloves garlic; minced
    2 cn (12 oz) Spam; cubed OR
    3 c Cubed cooked ham
    6 Eggs; lightly beaten
    1/2 ts Salt
    1/4 ts Pepper
    1 1/2 c Shredded Cheddar (6 oz)

    In a large skillet, fry potatoes in oil for 10 minutes. Add green
    pepper, onion and garlic; continue to cook for 25 minutes or until
    potatoes are browned and vegetables are tender. Stir in Spam; heat
    through. Cover and remove from the heat. In another greased
    skillet, combine eggs, salt and pepper. Cook and stir gently until
    eggs are set. Stir into potato mixture. Top with cheese; cover for
    3 to 5 minutes or until cheese is melted. Serves 6 to 8.
