Title: Avocado Mousse Salad

Yield: 8 Servings

2 lg Ripe avocados
1 cn Spam luncheon meat
-cut in chunks
Juice of 1 lemon
1/2 c Dairy sour cream
1/4 ts Salt
Few drops hot pepper sauce
1 Envelope unflavored gelatin
1/4 c Cold water
Lettuce leaves
Pitted black olives

Halve, pit, and peel avocados; cut into chunks. Combine avocado,
Spam, lemon juice, sour cream, salt, and pepper sauce in food
processor or blender and process until smooth. Soften gelatin in
cold water; dissolve over boiling water. Stir in avocado mixture.
Divide into eight 1/2-cup molds. Refrigerate at least 2 hours. To
serve unmold onto lettuce-lined salad plates; garnish with black
olives, if desired.
