I do believe one could cut back on the orange juice a bit but it
still scores well ...

Title: Grilled Orange Coriander Steak

Yield: 6 Servings
1 ts Grated orange peel
3/4 c Orange juice
1 Medium-size onion, minced
3 Cloves garlic, minced or
Pressed
1/4 c White wine vinegar
1 1/2 tb Ground coriander
1 ts Each cracked pepper and dry
Basil
1 1/2 lb Lean top round steak, about
1 Inch thick
Finely shredded orange peel
In a bowl, stir together grated orange peel, orange juice, onion,
garlic, vinegar, coriander, pepper, and basil. Measure out 1/2 cup
of the mixture, cover and refrigerate until serving time.
Trim and discard any fat from steak; place steak in a shallow
bowl. Pour remaining marinade over steak, cover, and refrigerate for
at least 4 hours or until next day, turning steak once or twice.
Remove steak from marinade and drain briefly, reserving marinade.
Place steak on a lightly greased grill 4 to 6 inches above a solid
bed of medium coals. Cook, turning once and basting often with
marinade, until done to your liking; cut to test (about 8 minutes
for rare). Meanwhile, heat reserved 1/2 cup marinade in a small pan
over low heat.
To serve, cut steak across the grain into thin slices. Garnish with
orange peel and accompany with heated marinade.

fat, 2 grams saturated fat, 71 milligrams cholesterol, 6 grams
carbohydrates, 28 grams protein, 53 milligrams sodium.
