Title: Rodbetor Med Notdressing
Categories: Scandinavia, Vegetables, Nuts, Dressing
Yield: 4 Servings
12 md Beets
50 g Walnuts
1 tb Vinegar
1 dl Oil
1 dl Water
Salt
Pepper
Chives
Beetroot with Nut Dressing
Boil beets (10 - 12 beets for 4 persons) unpeeled. Peel and slice
while they're still warm. Put them in a bowl and pour on a nut
dressing:
Finely part 50 g walnut kernels in a food processor or mixer. Add 1
tbs vinegar, 1 dl oil, and 1 dl water. Pour this in the food
processor and run for a few seconds. Flavor with salt and freshly
ground black pepper. Decorate with finely chopped chives.
