Title: Potatis Smorgas Med Valnots Majonnas

Yield: 4 Servings
1 1/3 lb New potatoes
1 bn Dill
4 Lettuce leaves
4 sl Coarse bread
1 oz Butter or margarine
1/2 Lemon
1/2 ts Honey
1/3 c Olive oil
1 Egg yolk
1/2 tb French mustard
1/3 c Creme fraiche or sour cream
1 3/4 oz Walnuts
Salt, pepper
POTATO SANDWICH WITH WALNUT MAYONNAISE
Scrub the potatoes (no need for peeling if the skin is thin), put it
in boiling water with the dill and let boil for a few minutes. Turn
off the heat and let them draw in the saucepan until cold.
Now let's make a potato sandwich! A simple and cheap dish which is
deliciously good. Spread the bread with butter and put a lettuce leaf
on each slice. Slice the potatoes and put a little "lump" of potatoes
on each sandwich. It's best if the potatoes have been boiled the same
day you're going to eat the sandwich, because too much of the taste
will go away otherwise.
Beat together mustard, lemon juice, honey, egg yolk, and a little
salt. Beat the sauce for a few minutes so that it gets slightly
"tough". Slowly beat in the oil until it becomes a mayonnaise.
Chop the walnuts and mix them in the mayo together with the creme
fraiche or sour cream. Flavor with salt and pepper and put a dollop
on each sandwich, sprinkled with chopped dill.
