Some Scandinavian vegetarian dishes ...
Although I found some trendy vegan restaurants in the larger cities
online, the nordic countries don't have a tradition of vegetarian
fare. Most of the things I found would normally be considered side
dishes and many aren't vegan as they contain eggs and/or dairy
products. But here are a few of things that I came across that are
hearty, have a reasonable protein content and are meat free.
2 c Swedish brown beans
5 c Water
1 Stick cinnamon
1 1/2 ts Salt
1/2 c Brown sugar
1/4 c Vinegar
Wash and drain beans. Add water and let soak overnight. Add
cinnamon and salt and cover. Simmer for two hours or until beans
are tender. Stir in sugar, vinegar and cook 15 minutes longer.
(Thicken with 2 tablespoons of cornstarch mixed with a little
water.)
