    Now that you're retired, why bother?
    I wouldn't ever have bothered unless the
    thing hung from shreds from my shoulders.
    Anyway, I still do a few concerts - though
    have recently been given the opportunity to
    "voluntarily" retire from one of my groups.
    Do you remember that you have a white jacket here? It is hanging in the closet of the hat room.

    I have a vague memory but have not had the
    occasion to wear it so it's not uppermost in
    my mind. But while I'm thinking of it, there
    are (at least) three suitcases unaccounted
    for - one black backpack thing with a handle
    that no longer retracts; one green one with a
    handle that's busted; and a big floppy blue
    and yellow bag. All these have music in them.
    I suspect they may be out near the downstairs
    back door. Don't make a special trip, but next
    time you're in the neighborhood, could you
    yea or nay that they are there? There were
    some pieces of music that I missed, and it
    seems that may be where they are.

    1/2 c Hot milk (120-1300)

    2 1/2 tb Pork fat
    3/4 lb Shrimp, shelled, deveined,
    -washed, dried & diced

    As noted about the best ones I've had in my
    travels, ideally there are also whole shrimp
    (or big chunks of big shrimp) in the filling.

    Do you remember these? They used to be
    staples on Chinese restaurant menus but
    no longer can be found.

    Title: Sesame Shrimp Toasts
    Categories: Appetizers, Seafood
    Servings: 4

    6 oz Cooked peeled medium-size
    -shrimp, thawed if frozen
    1 Piece ginger root, peeled,
    -grated (3/4")
    1 Garlic clove, crushed
    2 ts Cornstarch
    1 Egg white
    3 pn Five Spice Powder
    Salt to taste
    Fresh ground pepper to taste
    4 Thin slices white bread,
    -crusts removed
    3 tb Sesame seeds
    Vegetable oil for shallow
    -frying
    Green onion daisies

    Drain shrimp well on paper towels.

    Mince shrimp finely. In a bowl, mix shrimp with ginger, garlic and
    cornstarch. Lightly whisk egg white with a fork (just enough to make
    frothy) and add to shrimp. Stir in Five Spice Powder, salt and pepper;
    mix
    well. [M's note: lose the five-spice.]

    Press shrimp mixture evenly and firmly onto slices of bread. Sprinkle
    with
    sesame seeds and press on firmly. Heat 3/4" oil in a large skillet. Lower
    slices of bread, shrimp-side down, into hot oil and fry 2-3 minutes or
    until golden brown. Keep slices immersed in oil. Drain on paper towels.
    Cut
    into fingers and garnish with green onion daisies.

    I have had them at a sit down restaurant, perhaps when we went with you
    to the dim sum place down town (that is no longer there). I cannot say
    that I have looked for them since we rarely go to a Chinese restaurant
    except for the occasional carry out near us.

    Title: Shrimp Dip
    Categories: Dips, Appetizer
    Yield: 4 servings

    1/4 c Milk
    3 Tabasco sauce (drops)
    1/4 ts Garlic salt
    8 oz Cheddar cheese (cubed)
    1 c Mayonnaise
    1 tb Worcestershire sauce
    1 Onion (chopped)
    5 oz Shrimp (drained)

    Place all ingredients in blender and blend until smooth. Served
    chilled.

    Not sure that I've seen them with the sesame seeds, but it seems to me
    that I've seen them relatively recently at some Chinese restaurant or
    other... Haven't seen them at any of the buffets, though.... at least
    not recently.... May have seen them at some point at the Canton one, though.... I may just have to check around locally and see if they are
    still available at all....
