We did exactly the same thing! 3 frozen utility birds for $10 each
and if they are anything like the one we had at Christmas excellent
birds with the giblets!
Commercial turkeys, even utility grade, have a lot more flavour than
commercial battery raised chickens and they're even cheaper. The
leftover cooked meat can be packaged in small amounts and frozen for
quick and easy meals down the road. And each carcass yields 2-3
quarts of good stock.
Now that we are a household of just two, with no ravenous teenagers,
we tend to settle for 10 to 12 pound birds and not 20+ lb monsters
even thought the larger birds are older, more flavourful and have a
higher yield (better meat to bone ratio).
I don't agree with the sentiment though that ground turkey is a
satisfactory replacement for ground beef.

Title: Chili (Just Like Skyline's)
Categories: Chili, Groundmeat, Beef, Veal, Spice
Yield: 8 Servings
2 lb Lean ground beef; veal or
-turkey
1 qt Tomato juice
1 ts Cinnamon
1 ts Ground cumin
1 Whole onion*
1 ts Salt
1 1/2 ts Vinegar
1 ds Worchestershire sauce
1/8 ts Garlic powder
4 ts Chili powder
1 ts Allspice
1 ts Pepper
1 ts Red pepper
5 Bay leaves
Combine meat & tomato juice. Mash together. Add remaining
ingredients. (The onion should be peeled and placed in the
pot--remove when chili is finished.) Bring to a boil--reduce to
simmer--1 1/2 hours. Remove the 5 bay leaves.
Serve this over a hotdog with grated cheese for a cheese
coney--onions and mustard are optional. Serve this by itself for
chili, over spaghetti, for a chili spaghet, or top that with
cheese for a 3-way, add onions to that for a 4-way, add beans to
that for a 5-way.
*It is important to use the whole onion and remove it. It is only
used as flavoring. This is a good recipe for kids because most hate
onions. If you love onions on your chili, make it a 4 way, or just
put chopped onions on your chili.
