    So maybe just smoke some Boston butts and have appropriate sides would
    be more in the range of practicality for the size groups we've had the last few years. We've got the smoker; cole slaw, potato salad, baked beans, hush puppies (or corn bread) and 'nanner puddin' for dessert.

    That is about the only time we smoke things anymore. Even a single pork shoulder is way too much for us. We have some in the freezer that has
    been there for a couple of years. I enjoy doing it, but reserve for
    groups.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Bacon Roll-Ups
    Categories: Appetizer, Quick, Analyzed, Tested
    Yield: 4 servings

    4 oz Cheese, cream
    1/2 tb Chives
    1/2 tb Milk
    4 sl Bread
    1/4 lb Bacon

    Soften cream cheese. Preheat oven to 350. Combine cheese, chives, and
    milk. Stir to spreading consistency. Spread about 2 teaspoons on
    bread, then cut in 2 pieces. Cut bacon in half. Roll bread and wrap
    with bacon. Place on broiler pan. Bake for 30 minutes or until bacon
    browns.

    These freeze well. Thaw before cooking.

    Variations:

    1. Omit chives. Stir 1/2 can chopped olives and 1/2 ts garlic salt
    into cream cheese. Thin with milk and bake as directed.

    2. Omit chives and milk. Stir 1/2 can small shrimp into cream cheese;
    thin with pineapple juice. Bake as directed.

    3. Omit milk and add 1/2 ts paprika to cream cheese mixture. Thin
    with 1 ts sherry. Bake as directed.

    The possibilities are endless!

    Nutritional analysis per wrapped bread slice: 202 calories, 6 gm
    protein, 36 mg cholesterol, 13 gm carbohydrate, 312 mg sodium, 14 gm
    fat, 1.1 mg iron, 58.2 mg calcium.

    We have some in our freezer also. There's an assortment of various
    meats, some pre cooked, some easy do (like Italian sausage) in the freezer--some time in March, Steve will have surgery on his left thumb
    (the one he wears the brace on) for the arthritis. We'll need easy to
    fix meals with both of us somewhat handicapped. (G)

    Yield: 10 Servings

    1 Large Egg
    1 tb White Wine Vinegar
    1 tb EACH Dijon Mustard And
    -Anchovy Paste
    1/3 c Watercress Leaves, Packed
    1 Small Clove Garlic, Optional
    1 c Salad Oil
    24 To 36 Spears Asparagus

    Few finger foods can match the elegance of fresh asparagus. These
    spears are lightly cooked, then served with a boldly seasoned green
    mayonnaise for dipping. In a blender or food processor, combine the
    egg, vinegar, mustard, anchovy paste, water cress and if desired, the
    garlic Whirl until smooth. With the motor running, add the oil in a
    thin steady stream; continue to whirl until the mayonnaise is smooth.
    (At this point, you may cover and refrigerate the mayonnaise for up
    to 2 days.)

    In a wide frying pan, bring 1-inch of water to a boil, over high heat
    Add the asparagus, reduce the heat, cover and boil gently just until
    tender when pierced, (5 To 10 Minutes). Drain, immerse in cold water

    I'm not surprised on that point. Publix used to carry Bama brand
    mayo--an all natural one. Went to get some the other day and found
    another brand on the shelf in its place. Last year at the picnic, we
    went in to the Wegman's in Canandaigua; I got some all natural Wegman's
    brand mayo there. Guess I'll have to stock up whenever I go to Wegman's;
    good thing they're expanding locally. (G)

    but they changed something in their recipe that ruined them.

    2 lg Ripe Avocados
    3 tb Lime Or Lemon Juice
    1 Clove Garlic
    -Minced Or Pressed
    1 lg Tomato

    Salt (Optional)
    Liquid Hot Pepper Seasoning
    Tortilla Or Corn Chips

    Cut the avocados in half, remove the pits, and scrape the pulp into a
    bowl. With a fork, mash the pulp coarsely while blending in the lime
    juice. Add the garlic and tomato, season to taste with salt (if
    desired) and hot pepper seasoning. Serve with chips for dipping.

    I got an air fryer for Christmas, and besides being awesome for making any frozen appetizer you'd make in the oven, but in half the time, I've had fun making my own corn and flour tortilla chips.

    Flour tortilla chips are fragile, but with a much different flavor, and slightly fluffy.

    Definitely worth a shot.

    I think the Swiss was a store brand but the cheddars were all Cabot.
    Publix had a sale on the Cabot ones--didn't know it when we went to the
    store for other things but the cheese was right near the yogurt I wanted so......................(G)

    We got one a little bit before that . My wife was looking at them on
    Amazon, and getting information overload on sizes, materials etc. Some
    sounded quite good until you read some of the negative reviews -- many
    of which said something like "after a month the teflon coating started
    peeling off". The prices were also all over the map, up to $300 or
    more. Then a local store had a sale which offered a small model for
    $49.99 and we scooped it up. It has done quite well for small things,
    like tater tots, french fries, frozen fish portions. But to make
    something like chicken parm, she had to do two batches -- and that is
    not really ideal. Sooner or later a decent deal on a larger one will
    happen and we will get that, and will be glad to have learned on this
    smaller model. We think that the footprint size of the basket is more important than the quart measure. Having a higher container will not do
    us as much good as having a larger diameter basket.

    Does your wife eat seafood?

    2 tb Sesame seeds
    1 2 1/2 inch piece fresh
    Ginger- root peeled and
    Coarsely chopped
    1 tb Rice wine vinegar
    1 tb Oriental sesame oil
    1/4 c Cold water
    2 ts Honey
    1/2 ts Salt
    1/8 ts Ground hot red pepper
    2 1/2 lb Large shrimp (about 35)
    Shelled and deveined (2 lb
    When cleaned)

    2 tb Honey
    2 tb Rice wine vinegar
    2 tb Soy sauce
    4 ts Oriental sesame oil
    1/2 ts Dijon style mustard
    3 tb Peanut oil for cooking
    Shrimp

    MARINADE: Combine sesame seeds and gingerroot in container of electric
    blender or food processor. Cover, whirl until blended. Add vinegar,
    sesame oil, cold water, honey, salt and red pepper. Whirl until
    blended. Transfer the marinade to a large bowl. Add the shrimp and
    toss to coat. Cover with plastic wrap; marinate in refrigerator 45
    minutes but no longer than 60 minutes. SAUCE: Whisk honey, vinegar,
    soy sauce, sesame oil and mustard in small bowl. Reserve. Heat peanut
    oil in large skillet over medium high heat. Working in batches, lift
    shrimp from marinade with slotted spoon or spatula to skillet. Saute
    until shrimp just begin to curl, 1-3 minutes. Serve with sauce.

    Title: New York Cheddar Cheese Soup*
    Categories: American, Appetizer
    Yield: 6 Cups

    1 Onion, sliced
    1 c Diced celery
    1/4 c Butter
    1/4 c All purpose flour
    1/2 ts Dry mustard
    1 ts Worcestershire
    1/2 ts Garlic salt
    1/2 ts MSG
    2 ea Boullion cubes
    1 c Water
    1 ea Carrot, diced
    4 c Milk
    8 oz Sharp Cheddar cheese,
    -shredded
    Salt/peper to taste

    In a large saucepan, cook onion and celery in butter for about five
    minutes. Blend in next five ingredients. Then add bouillon cubes,
    water and carrot.

    Bring to a boil and simmer covered for 15 minutes. Add milk and heat
    almost to boiling. Watch carefully. Add cheese and stir until
    cheese is melted. Season to taste.

    I checked last Friday when we did our shopping... no Dundee's ginger,
    but there was a different brand (which I'd bought previously), Wilkin &

    other places that have committed to a spot in the plaza where the
    Raleigh Wegman's is being built. Anything from a couple of work out
    places to a spa to Starbucks to a Mediterranian fast casual rstaurant to
    an eye doctor and others. Oh, and the Wegman's will include a Burger
    Bar. Should be interesting.

    Trying to build up a new (and then repeat) customer base? We already
    know that they will be one of our regular shopping places. (G) Still
    haven't seen the signage for the WF store yet, but they keep talking
    about it. Also saw recently that they're going to build one in another
    town in NC; I think that will make a total of 6 in the first venture
    into the state.

    locally.... ;)
