    Title: Toasted Denver Sandwiches
    Categories: Sandwiches, Ham, Eggs
    Yield: 4 Servings

    1/2 lb Ham
    2 md Onion, chopped
    1 md Green bell pepper, chopped
    1 tb Butter
    8 lg Eggs, beaten with a fork
    S&P
    8 sl Toast, buttered

    Dice ham and fry with the onion and bell pepper in butter until
    onions are lightly browned.

    Add eggs and seasonings. When the omelette is almost done, turn
    and finish, then cut into four wedges for sandwich filling and
    assemble.

    So it seems. Alaska has legalized drugs also. Myself? I take enough drugs to
    diddle with the nerves in my heart as it is without adding variables into the concoction the Cardiologist has me on.

    Looks like a Denver Omelet between 2 chunks of bread. Which of course I'd never eat, I don't particularly like bell peppers. I'll buy one, dice it, and suckie bag it in 1Tbsp portions (cooking for 1, and I do this for celery also) for when I need the flavor (because of the freezing it turns to mush when it thaws and is pretty much unidentifiable).

    It is exactly that. So what are Denver omelets called in Denver?

    I'd never eat, I don't particularly like bell peppers.

    I on the other hand am fond of both bell peppers and celery in
    generous amounts.

    Perhaps this will be more to your taste ...

    Title: Bacon and Cheese Omelet
    Categories: Eggs, Bacon, Cheese, Dairy, Onion
    Yield: 1 Servings

    2 Eggs
    2 tb Milk
    1 ts Butter
    2 sl Bacon
    2 tb Grated cheese
    1 tb Minced onion

    Fry bacon, drain and crumble. Beat eggs with milk. In a non-stick
    skillet, melt butter and pour eggs in. Turn heat low and cook
    until eggs are partially set. On half the omelet, sprinkle bacon,
    cheese and onion. Fold the other half over the filling. Bake at
    375 degrees until eggs are set and cheese melted, about 3 minutes.
    Makes 1 large omelet.

    Awww man! Somebody just stopped by and dropped off ANOTHER pound of Wisconsin Cheddar. Extra sharp naturally. That makes close to 4 pounds in the fridge. Lemmee think...since I'm headed that way...a pound to the San Diego people, a pound to my brother in Cedarpines Park, a pound to the parents of one of the San Diego people in San Diego...and keep the rest of pound that I've been gnawing at (which has never been in California, to my knowledge).

    I've been wondering about that for years but didn't know anyone
    there to ask! I love playing with young waitresses in Edmonton.

    Title: Scotch Eggs from Gourmet Mag
    Categories: British, Sausage, Eggs
    Yield: 4 Servings

    1 1/4 lb Bulk country-style or herbed
    -sausage
    1 ts Crumbled dried sage
    1/2 ts Dried thyme; crumbled
    1/4 ts Cayenne
    4 Hard-boiled large eggs
    1/2 c All-purpose flour
    2 Raw large eggs; beaten
    -lightly
    1 c Fresh bread crumbs
    Vegetable oil for
    -deep-frying the eggs

    In a large bowl combine well the sausage, the sage, the thyme, and
    the cayenne, divide the mixture into 4 equal portions, and flatten
    each portion into a thin round. Enclose each hard-boiled egg
    completely in 1 of the sausage rounds, patting the sausage into
    place. Dredge the sausage-coated eggs in the flour, shaking off
    the excess, dip them in the raw eggs, letting the excess drip off,
    and roll them gently in the bread crumbs, coating them well. In a
    deep fryer heat 2 1/2 inches of the oil to 350F. and in it fry the
    Scotch eggs, 2 at a time, turning them and transferring them to
    paper towels to drain with a slotted spoon as they are done, for
    10 minutes.
