    Yes even the breast meat is packed with flavour and very juicy if
    not overcooked.

    Another way to go with cukes:

    Title: Cucumber Sandwiches
    Categories: Sandwiches, Cheese
    Yield: 20 Sandwiches

    8 oz Cream cheese; softened
    1/3 c Mayonnaise
    1 md Cucumbers
    1/4 ts Garlic salt
    1/2 ts Dill, fresh; chopped
    20 sl Sandwich bread
    20 sl Wheat bread; thin

    Peel, seed, and finely chop cucumbers. Process cream cheese and
    mayonnaise in blender or food processor until smooth, stopping once
    to scrape down sides. Combine cream cheese mixture, cucumber, garlic
    salt, and dill. Spread cucumber mixture evenly onto white bread
    slices, and top with wheat bread. Using a 2"-3" round cutter, cut
    sandwiches, discarding edges. Or cut crusts from bread and discard,
    then cut sandwiches into quarters. Store cucumber sandwiches in
    airtight container for up to 1 hour before serving.

    There's the rub... one still needs to pay attention to the cooking... ;)

    Of course, I've had regular dark meat that was overcooked to
    inedibility, too.... not a good thing at all... (G)
