    Paleo is short for paleolithic; it's the so-called caveman diet

    Title: Christian's Danish Potted Veal Hearts
    Categories: Scandinavia, Veal, Offal
    Yield: 12 Servings

    3 Veal hearts
    9 Sprigs parsley
    3 md Onions; thinly sliced
    2 tb Fat
    2 Carrots
    1 1/2 Stalks celery
    1 Bay leaf
    4 Peppercorns
    1 ts Salt
    1/8 ts White pepper
    2 1/4 c Water
    1/3 c Heavy cream

    Wash hearts; remove membranes, tubes, sinewy parts from center
    with sharp kitchen scissors. Place parsley and few slices onion in
    each. Close each with skewers or sew.

    Brown well in fat in heavy pot; add remaining onions, carrots,
    celery, bay leaf, peppercorns, seasonings and water. Cover and
    cook over low heat 2 hours or longer as necessary.

    Should be 1 cup of gravy in pot when hearts tender. Remove hearts
    (skewers removed). Add cream to gravy, pour over meat.

    That much I manage to retain... It's the "popular perception" part that regularly confuses me... ;)

    Not a very accurate perception, either... and we know what assume
    means... ;) Some of those excluded items would have been accessible to hunter-gatherers along with the animals they hunted...

    wild cattle and sheep etc. Rice, corn and wheat would have been a
    minuscule part of their diet in the pre-agriculture days.

    And there's a related fad diet idea that the Original Peoples of the
    Americas should only eat corn, Asians should only eat rice and
    Europeans should be the only ones to eat oats and wheat. And
    Africans ought to restrict themselves to sorghum and millet.
    Utter nonsense of course.

    1 tb Ranch dressing
    2 sl Bread; toasted
    12 Thin cucumber slices
    2 Bacon strips; cooked
    1 Tomato slice

    Spread salad dressing on one side of each slice of toast. Layer
    cucumber, bacon and tomato on one slice; top with second slice.
