    Title: HOLYROOD PUDDING
    Categories: Desserts, Puddings, Scottish, Euro-n
    Yield: 4

    2 1/2 c Sugar- castor
    1/3 c Flour- semolina
    50 g Biscuits- ratafia
    ;crushed
    2 tb Butter or margarine
    3 Eggs
    ;separated
    1 tb Jam- marmalade
    ; SAUCE
    2 tb Sugar- castor
    2/3 c Milk
    1/4 c Nuts- ground almonds
    1 tb Orange flower water

    To make the pudding, bring the milk to the boil in a saucepan
    and stir in the sugar, semolina, crushed biscuits and butter or
    margarine. Simmer for 5 minutes, stirring constantly, then pour
    into a bowl and leave to cool.

    Beat in the egg yolks, one at a time, then add the marmalade.
    Whisk the egg whites until stiff, then carefully fold them into
    the mixture.

    Spoon the mixture into a greased 990ml pudding basin and cover
    with greased and pleated greaseproof paper, twisting and folding
    under the rim to secure. Place in a large saucepan and fill with
    enough boiling water to come halfway up the side of the basin.
    Cover and steam for 1 1/4 hours, topping up with boiling water
    as necessary.

    Meanwhile, whisk all the sauce ingredients together. Heat in the
    top of a double boiler for about 10 minutes, stirring
    continuously, until thick.

    Turn out the pudding and serve with the sauce.

    For most of us, that kind of travel is wishful thinking. If Steve hadn't
    gone into the Army, we wouldn't have been able to see/do most of the
    places we've been to. We were able to live for extended times in
    Germany, HI, AZ and spend shorter, but significant amounts of time in
    other places--all of which we would not have experienced otherwise.

    I'm not a fan of Starbuck's either. OTOH, I believe in supporting worthy organisations, including those that provide worthwhile jobs for former military.
