    True, when a person is almost dead weight, it's hard for the untrained person to handle. Caregivers know how to properly lift, etc but still
    need a lot of strength to do so without hurting themselves. Not a job I could handle.
    People have noted my increase in upper body strength
    between before and after this trip.

    Here's another souse, which appears to be a pleasant one:

    Ocean fresh blue moki kokoda
    Categories: ceviche, fish, New Zealand
    Serves: 4

    3 limes, juiced
    1/2 red capsicum, finely chopped
    4 tb spring onion, finely chopped
    1/2 telegraph cucumber, cut into medium dice
    3 tomatoes, seeds removed and diced
    3 tb flat leaf parsley, roughly chopped
    2 tb coriander leaves, finely chopped
    salt and freshly ground black pepper
    250 ml coconut cream

    Place cubed fish and onion into a shallow bowl.

    Pour over enough citrus juice to cover the fish.
    Cover and refrigerate for 12 to 24 hr, turning
    the fish occasionally to ensure that it
    marinates evenly. When the fish has become
    white, drain off the juice.

    When the fish is marinated, mix in capsicum,
    spring onion, cucumber, tomatoes, chopped herbs,
    and season to taste.

    Pour over enough coconut cream to cover and bind.

    Serve chilled.

    Yup, my fingers used to be stronger when I was practicing more, too...

    I've been buying a pork souse lately... makes a good snack/meal-ish... Camellia (I think it is) makes a mild and a hot one... the mild isn't
    mild enough for the cats to want to share it, so I just go for the hot,
