Chicken Fricassee

Serves 4
1/4 c potato starch
1/2 ts pepper
2 ts oil
1 lg chicken, skinned and cut up
1 lg onion, diced
2 garlic cloves, diced
2 stalks celery, diced, or to taste
2 ts dried parsley flakes
1 ts paprika
1 1/2 c dry or semi-dry white wine
Put the potato starch in a plastic bag with the pepper.
Place the chicken pieces in the bag and shake well to
coat lightly. Heat the oil in a large frying pan and
brown the chicken. Remove the chicken from the pan and
saute the onion, garlic, and celery until they are soft.
Sprinkle the parsley and paprika over the vegetables and
mix in. Pour in the wine and return the chicken to the
pan. Cover and simmer until the chicken is fork-tender,
about 1 1/4 hr.
