    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: MUSHROOM ALMOND PATE
    Categories: Spreads, Appetizers
    Yield: 8 Servings

    1 c Slivered almonds
    1/4 c Butter or margarine
    1 sm Onion, chopped
    1 Clove garlic, minced or
    -pressed
    3/4 lb Mushrooms, sliced
    3/4 t Salt
    1/2 t Thyme leaves
    1/2 t White pepper
    2 T Salad oil

    Spread almonds in a shallow pan and toast in a 350 oven for about 8
    minutes or until lightly browned.

    Melt butter in a wide frying pan over medium-high heat. Add onion,
    garlic, mushrooms, salt, thyme and pepper. Cook, stirring
    occasionally, until onion is soft and most of pan juices have
    evaporated.

    In a food processor or blender, whirl almonds to form a paste. With
    motor running, add oil and whirl until creamy. Add mushroom mixture
    and whirl until pate is smooth. Makes eight 1/4 C servings.

    Per serving: 4 grams protein, 6 grams carbohydrate, 24 mg.
    cholesterol, 234 calories.

    Title: Ultimate Texas Hash

    Yield: 1 Recipe

    1 c Rice
    2 c ;water
    Quarter stick of butter
    Thingie of salt
    1 lb Ground turkey
    Some chopped onions
    Chopped green peppers
    6 oz Can Ro-Tel tomatoes (whole)
    Smidgen of chili powder
    Parmesan cheese

    Doggonit, ol' pardner, ever since you posted that Texas Hash recipe,
    I've been a-fussin' with it. I think I finally came up with a winner.

    But first, let's talk about rice. I have *NEVER* been able to make
    good rice. Edible, maybe, but not good or great, like Kathy does it.
    Her microwave method for rice works just fine, but you gotta be born
    with a stopwatch built into your head to use it right. Not to
    mention memorizing the timing cycles (cook it for three minutes, let
    it rest, turn around three times and hop three leaps forward, pat
    your head and rub your belly, turn the rice back on for thirty
    seconds while saying the Gettysburg Address standing on your head,
    then...)

    You get the picture.

    Here's how I do it...first of all, I use just plain ol' rice. Not
    that converted stuff. Ya never know what it's been converted from.
    I mean, I'm not a religious nut or anything like that, but suppose it
    turned out that I was using Jewish rice that had converted from
    Catholicism? Or some Southern Baptist rice that had been converted
    from Greek Orthodox? Ya just never know.

    Anyway, I take about a cup of rice, 2 cups of water, about a quarter
    of a stick of butter, and a thingie of salt. Put 'er all into a pot
    and bring 'er to a boil. When she starts boiling, turn the heat down
    to just a tad above "simmer", cover it, and let it go for about 14
    minutes.

    Now here's where I got radical...I used ground turkey, not ground
    beef. About a pound, combined with some chopped onions, chopped green
    peppers, and a can (6 oz) of Ro-Tel tomatoes (whole)...plus, of
    course, a smidgen of chili powder just to give it a little more
    authority than the Ro-Tels can provide.

    Now the rice is done...almost. Well, the 14 minutes are up, anyway.
    Take it off the heat and let it stand for three or four minutes.

    Enough time to smoke a cigarette and/or drink a beer. That's perfect
    timing.

    Toss all the above (rice and meat, not the beer and cigarette) into
    one of those glass oven-proof-type dishes (I think it's called a
    "casserole dish"), top 'er with Parmesan cheese, and bake the whole
    shootin' match in a 350 degree oven for 45 minutes, or until the
    smoke detector goes off.

    So, whaddya think? Is that the ultimate Texas Hash, or what? I
    guess you could fancy it up by adding some 'shrooms, maybe some green
    peas... the mind boggles. Next time I might try some broccoli on
    top, with a cheese sauce instead of the grated Parmesan.

    Another variation might substitute canned tuna for the turkey...I'm
    not too sure how far afield we can go with this and still call it
    "Texas Hash", however...perhaps Ms. Moderator might post a ruling on
    this?

    Shame you can't patent or copyright a recipe. This puppy is MINE!

    OTOH, a decade or two ago I would have expected to see considerable snow
    here. And I expect so might you have given that you are much further
    north than I am. They are predicting a high of 57f later this week, and
    highs more than freezing for the next ten days. Rain, but no snow.
