    I was in a similar state of not-quite belief myself... it would have
    been nice had it worked out, but there was only a slim chance anyway...
    it was a possible chance for us to do some estate work over the weekend, but I reminded him that I wouldn't be really available until Monday....

    that a future picnic might be possible for him to get to... :)

    Many margarines, especially ones that aren't
    pareve, are worse for lactose intolerants
    than butter is, because they rely on milk
    solids to make any kind of fake butter flavor.
    The one they used had no milk solids or any dairy in it... and tasted
    pretty decent in its own right.... not butter exactly, but definitely
    not fake butter flavor, either.... :)

    Fat can have a flavor of its own, but it's not likely
    to have any butteriness unless there's a substantial
    dairy component.

    One thing that keeps us going besides our stubbornness
    is the universality of the subject matter.

    everything, have found plenty to yammer on
    about during this week of enforced proximity.
    Some things bear repeating.... ;)

    Well, Edith is working on getting into the echo... she did manage to get herself on as a user on Tiny's, but I've not seen any evidence she's
    even tried reading messages online yet... Maybe after I get back from
    the wedding this weekend I'll see if I can help her get things going... She really did enjoy herself at the Picnic... :)
    We see that the wheels turned, and not so slowly
    as one might have feared.
    We just tried working with her to get her back onto the bbs today...
    she'd brought in her little computer with a Bluetooth keyboard and mouse
    to church.... there seemed to be some incompatibilities between her
    browser, the church's wifi, and the bbs... A further session will be
    planned later this week at her house... :)

    Nothing in this technological jungle coordinates
    seamlessly with anything else.

    Ensalada de Habas (Fava Bean Salad)
    Categories: Ecuadorean, Chicagoan, starter, celebrity, vegan, pulse
    Serves: 4

    Kosher salt
    1 lb fresh fava beans, shelled
    2 lb fresh English peas, shelled
    1 bn watercress, stemmed (2 c loosely packed)
    2 shallots, thinly sliced
    2 radishes, cut into matchsticks
    2 Tb minced fresh flat-leaf parsley
    2 Tb extra virgin olive oil
    2 Tb freshly squeezed lemon juice
    Freshly ground black pepper
    h - Aj� costeno for serving
    1/2 red Fresno chili, seeds and ribs removed, finely diced
    1/2 plum tomato, finely diced
    1/4 Spanish onion, finely diced
    2 scallions (white and green parts), finely chopped
    2 Tb minced fresh flat-leaf parsley
    2 Tb minced fresh cilantro
    2 Tb distilled white vinegar
    2 Tb freshly squeezed lime juice
    1 Tb extra virgin olive oil
    1/2 ts agave nectar
    Kosher salt

    Bring a large saucepan of heavily salted water to a
    rolling boil. Prepare an ice bath. In batches, boil
    the favas until tender, about 3 min, using a sieve
    or skimmer to transfer each batch from the boiling
    water to the ice bath. Repeat with the peas, cooking
    for about 4 min and cooling in the ice bath. Drain
    the favas and peas. Peel off and discard the outer
    skins of the favas. Combine the favas, peas, watercress,
    shallots, radishes, and parsley. Add the oil and lemon
    juice and toss to lightly dress. Season to taste with
    salt and freshly ground black pepper before serving
    with aj� on the side.

    Aj� costeno - Combine all the ingredients in a
    bowl, except for the salt, and mix well. Remove
    half of the vegetables and set aside in a
    separate bowl. Pulse the remaining half in a
    food processor only until the vegetables are
    finely chopped; it should not be a smooth sauce.
    Fold in the reserved vegetables. Season the sauce
    to taste with salt. Chill before using.

    Canoleo had no dairy component, but was made from canola oil... which I
    guess what imparted the nice flavor...

    Way too true.... sigh... We ran into that again when we went over to
    her house, armed with Richard's Windows10 laptop... Syncterm didn't want
    to work nicely on either machine (hers or Richard's) to connect to
    Tiny's... She did manage to get back onto Tiny's a number of times after
    we left, and read some messages and did send a couple of replies...
    another session will be scheduled soon, I'm thinking... :)
