    Having a bent arm from having fallen out of a tree
    as a kid and having his mom deny him medical treatment,
    saying that Christian Science practice would automatically
    set the fracture, but that's getting toward a forbidden
    topic. I myself think of it as mass psychosis and have
    had acquaintances die terrible deaths under the watch of
    such practitioners.

    Yield: 4 200 ml jars

    420 g Eggs (6 or 7 depending on size)
    500 g Coconut milk
    340 g Sugar
    6 Pandan leaves, knotted
    80 g Sugar
    20 g Butter

    Whisk eggs and sugar till smooth and strain.

    Place eggs in a bowl over boiling water and cook
    25 min or until the batter reaches 80C/175F. Stir
    occasionally in the initial stages of cooking and
    more constantly when the eggs start to thicken.

    Place the pandan leaves in a separate pot and add
    the coconut milk. Bring it to a simmer and set aside
    while the eggs are cooking. Strain the coconut milk.
    Measure out 420 g and add this to the egg batter and
    cook for another 35 min or until the temperature
    reaches 80C/175F and the kaya reaches the consistency
    you want. When the kaya is almost ready (around 45 min),
    melt the remaining sugar and butter. Leave to cool a
    little and add to the kaya slowly. Continue to stir
    continuously until the consistency is like pancake
    batter.

    Fill the jars and cover with the caps (don˙t tighten).
    Place in rice cooker with water up to 3/4 the height
    of the jars. Turn to keep warm mode and leave for the
    next 1 to 3 hr. My preference is 1 hr.

    I have lots of friends who don't like doctors much, I've gotten to
    that point myself, but that's pushing it a bit far.

    Mostly just died of old age or got scrapped for a newer model. The
    old ones still around are often reconditioned and put right back to
    work.

    OTOH sometimes it's a LOT easier to make the authentic product with
    the tools designed for the purpose.
