Rau Ram is the Vietnamese name for an herb known as Vietnamese
cilantro, Vietnamese mint or Laksa leaf. It's not really a mint or a
cilantro, although it is said to taste a little bit like a
combination of both of them. It's actually a knotweed. And it's a
popular herb throughout SE Asia; laksa is a Nonya (Chinese-
Malaysian) dish ... a spicy noodle soup.

Title: Chicken Laksa

Yield: 4 Servings
400 g Skin-less chicken breast
Diced
1/2 c Carrot cut into thin strips
1/2 c Capsicum cut into thin
Strips
1 c Bean sprouts
1/2 c Shallots sliced
1 tb Fresh chopped coriander
1/2 ts Crushed garlic (in jar)
1 ts Crushed ginger (in jar)
1 ts Lemongrass (in jar)
3 ts Masaman curry paste
1 ts Turmeric
1 ts Imitation coconut essence
375 ml can evaporated light milk
500 ml Carton chicken stock liquid
1 tb Corn flour
1 1/2 c Singapore noodles
Cooking spray
In a large non-stick fry pan or wok coated with cooking spray
saute chicken, garlic and ginger together for 4 minutes. Toss in
carrots and capsicum and cook another 2 minutes. Place all other
ingredients except milk and corn flour into pan and mix together
well. Combine corn starch with milk and add to dish. Simmer 5
minutes then serve.
