No idea what rau rau is

    It's a typo!

    Title: SAIONNAIS SCALLOP SEVICHE

    Another typo: He means Saigonnais.

3 oz Rau Rau (an aromatic leaf)

Rau Ram is the Vietnamese name for an herb known as Vietnamese
cilantro, Vietnamese mint or Laksa leaf. It's not really a mint or a
cilantro, although it is said to taste a little bit like a
combination of both of them. It's actually a knotweed. And it's a
popular herb throughout SE Asia; laksa is a Nonya (Chinese-
Malaysian) dish ... a spicy noodle soup.
