From MICHAEL LOO@1:123/140 to NANCY BACKUS on Monday, September 17, 2018 04:20:58
Greetings from picnicland, where the Shipps, the Backuses,
and the Hafflys are here with Nancy's friend Edith and
niece Bonnie as well as Nancy and I sitting around gorging
on delicacies including an unhealthy number of carbs.
Burt and Shirley are due soon.
Either you forgot Lydia, or you called her by my name... ;)

I forgot Lydia. How could I forget Lydia?

you. Next year for sure, perhaps in North Carolina?
And Edith declared at the end of the picnic that she wanted to do it next year... perhaps she only meant attending it... ;) Also, Lydia said

Probably, although hooking up with the church
fellowship meal saved a bit of effort, so that
might make a first-time host's job more manageable.

    she'd do this again.... :)

A good time was had by all, and I hope she didn't
    lose money on the deal.

Lydia says she's going to bring this to a church dinner sometime... she expects it to be a rousing hit... :) She'll have to make sure that it

With her skills she probably could make it
    look even more convincing.

gets served as an entree rather than wait for dessert... that could be
    an interesting surprise... (G)

It would be a surprise only if it were on the
    dessert table.

I don't see the tomato sauce there.... ;)

True - there were only a couple tablespoons of tomato
sauce, but that might have made a difference. The
overwhelming bulk of the tomato went into the cumin
    meatballs sauce.

1 c finely shredded Parmesan cheese
1 c fine dry bread crumbs
    1/2 c unsalted butter, melted
    1 c finely chopped onion
1/2 c finely chopped green sweet pepper
1/2 c finely chopped red sweet pepper
    1 Tb olive oil
    1 ts salt
    1/4 ts ground black pepper
1 1/2 lb cream cheese, softened
4 oz smoked Gouda cheese, shredded
    3 eggs
1 lb fresh or frozen cooked, shelled, crawfish tails
    - packaged with juice
    - or 1 lb cooked, shelled and deveined medium shrimp
    - coarsely chopped
    1/2 c whipping cream
    Crackers or toasted baguette slices

For crust. In a medium bowl, combine Parmesan, bread
crumbs, and melted butter. Press Parmesan mixture
into the bottom of a 9-in springform pan. Set aside.

In a medium skillet, cook onion and sweet peppers in
hot oil over medium heat for 2 min. Add salt and black
pepper. Cook and stir for 1 min more. Remove from heat.
    Set aside.

For filling. In a large mixing bowl, beat cream cheese
and Gouda with an electric mixer until smooth. Add
eggs; beat just until combined. Do not overbeat. Stir
in the onion mixture, coarsely chopped crawfish tails
with juice or shrimp, and whipping cream.

Pour filling into crust. Bake at 350F for 1 to 1-1/4 hr
or until center appears nearly set when shaken. Cool on
a wire rack for 1 hr. Cover; chill at least 2 hr up to
    24 hr in the refrigerator.

To serve, remove sides of pan. With a warm knife, cut into
wedges. Serve with crackers or toasted baguette slices.
