    Greetings from picnicland, where the Shipps, the Backuses,
    and the Hafflys are here with Nancy's friend Edith and
    niece Bonnie as well as Nancy and I sitting around gorging
    on delicacies including an unhealthy number of carbs.
    Burt and Shirley are due soon.

    Last night was Abyssinia in Rochester, today is the picnic
    all day cooking, tomorrow a joint venture with Nancy's
    church. I gained several pounds in Wisconsin and am on
    track to gain several more here. A good time will be had
    by all, and those who couldn't make it, we feel sorry for
    you. Next year for sure, perhaps in North Carolina?

    Carrot cake
    categories: picnic, main, mine
    servings: 12 to 16

    h - cake
    2 md onions
    12 oz carrots
    1 garlic clove
    3 lb ground beef
    1/2 lb breadcrumbs
    6 lg eggs, beaten
    2 Tb thyme
    salt
    1 Tb pepper
    h - frosting
    6 md potatoes
    6 garlic cloves, not peeled
    water
    1 c sour cream
    birthday candles
    h - seasoning correction
    lemon juice or white wine vinegar
    salt

    Shred onions and carrots. Mince garlic. Combine
    all cake ingredients and press into two oiled
    9" cake pans. Bake at 350F for 40 min or until
    quite solid. Let cool.

    Meanwhile, boil potatoes and garlic until potatoes
    are tender. Let cool. Drain potatoes and garlic.
    Remove and discard skins while still warm. Mash
    until smooth with sour cream, adding a bit of the
    garlicky cooking water to adjust consistency.
    Taste and correct seasoning with lemon juice and
    plenty of salt.

    Unmold cake layers by inverting onto plates.

    Set one cake layer on an ovenproof serving plate.
    Cover with a layer of frosting, then set second cake
    layer over. Frost top and sides with frosting. If
    any frosting remains, you may pipe fancy decorations
    or a border as you choose. Arrange birthday candles
    on top.

    expects it to be a rousing hit... :) She'll have to make sure that it
