Does Lili have a Sous vide too?

Don't give her any ideas. Actually, a food sealer
bag and a water bath and a kitchen thermometer,
that combo makes enough of a sous vide.

A water bath is pretty high tech! One can get by with an insulated
beer cooler half full of hot eater and a tea kettle to add a bit of
    boiling hot water periodically.

One thing I don't have is a pressure cooker and I hear a lot of good
things about the multi-temperature Insta-Pot. I just might get one.
They're in high demand right now so I'll wait a bit. There may be
    sales and markdowns after Christmas.

    Anyone here get one yet?

    Cheers

    Jim

Interesting; good to keep in mind for places where you're cooking "off
the grid". Hmmmmmmm, wonder how well it would work in the camper while
going down the road. Guess it would, unless we hit bumps/ruts hard
    enough to spill the water.

We have a couple, one for the house, one for the camper. They do work
well; Steve likes to do cheesecakes in them--you get a velvetty smooth
cake, no cracks, no brown tops, etc. We've also used the in house one as
a rice cooker (with tweaks) and a slow cooker (works well). I'm not
throwing out my pressure cooker, rice cooker or crock pots yet but this
is a very workable alternative. It's about crock pot or rice cooker size
so figure about that big a "foot print" on your counter top. Ours are 6
quart but I've seen an 8 quart model out now--probably a bit much for
most people; I'd stick with the 6.

You'd just need a cooler with a tight fitting lid that wouldn't pop
    open.

I don't have a pressure cooker and don't like my current crock pot
which my main motivation although the yogurt maker function is an
nice bonus as I presently use the oven with the light on which is
not ideal. I don't feel I need a rice cooker as I am happy using a
stove top sauce pan for that.

    I'd stick with the 6.

That's what I was planning on actually.

I have just formatted another batch of downloaded recipes many of
which I looked up based on a reference to something here that I
didn't have in my recipe collection already.

I forget now who mentioned Henderson's Relish or why but it led to
    this discovery.

    Title: Spam Yorkshire Breakfast
    Categories: British, Spam, Breakfast
    Servings: 4

    1 x 340g can of SPAM Chopped
    Pork and Ham cut into
    1/2 inch cubes
    8 TB Henderson's Relish
    200 g plain flour
    1/4 ts salt
    350 ml milk
    2 lg eggs
    1 pn salt and pepper
    4 TB vegetable oil

Pre heat the oven to 220C/180C Fan Put the flour, salt and pepper
into a large bowl Beat the eggs and milk together and gradually add
to the seasoned flour until you have a smooth batter. Leave to stand
at room temperature for 30 minutes. Spread 1/4 of the SPAM Chopped
Pork and Ham on a baking sheet and bake in the oven for 15/20
minutes until golden brown. Leave to one side and keep warm. Pour the
oil into 8 holes of a deep 12 hole pudding tin, then heat the tin in
the oven for 5 minutes. Carefully ladle the batter into the tin and
top each pudding the remaining cubed SPAM Chopped Pork and Ham. Bake
the puddings in the oven for 30 minutes until well risen and the
cubes of SPAM Chopped Pork and Ham are golden brown. Remove from
the oven and top each pudding with the extra cooked cubes of SPAM
Chopped Pork and Ham. Drizzle each pudding with a tablespoon of
Henderson's Relish, serve hot and enjoy!

Henderson's relish was first made by Henry Henderson of Sheffield in
1885. The secret recipe contains tamarinds, cayenne peppers,
vinegar, garlic oil and cloves. Also water, vinegar, sugar,
caramel, salt. It is claimed by Henderson company's fans to be 'like
Worcester sauce but one million times better' and 'definitely the
best non-alcoholic liquid on the face of the planet'.

    Hi Jim,

    Sous vide

A water bath is pretty high tech! One can get by with an insulated

You'd just need a cooler with a tight fitting lid that wouldn't pop
    open.

We do have one of those--a Sterling free piston, originally used for
medical transport. A number of them were donated to Habitat for
Humanity's ReStore and we bought one.

Might be worth looking into the Insta-Pot, but it's your choice in the
long run. Nice thing about the rice cooker function is that it does
speed up cooking the rice, with no worry about tweaking the heat setting
    or boil over.

    I'd stick with the 6.

That's what I was planning on actually.

Unless you cook for a large group on a regular basis, the 6 quart will
fit your needs. It's about the size of some of the rice cookers that are
    on the market now.

I've no idea; I don't recall the discussion.
