    I didn't know then that tupelo was a tree. Later I learned that Elvis
    Presley was born in Tupelo, Miss. and I assumed that was the
    connection, a love song about a southern girl. I didn't know more
    about where the honey came from until much later and I still haven't
    had a taste of it. I am familiar with orange blossom honey and,
    closer to home, apple, buckwheat, fireweed and goldenrod honey.

    Title: Clover And Rose "Honey"
    Categories: Wild, Info
    Yield: 1 batch

    45 Red or purple clover
    Blossoms
    45 White clover blossoms
    25 Wild rose petals
    10 c Sugar
    2 c Water
    1 ts Alum

    Wash blossoms in colander under faucet. Put all ingredients in pan and
    stir until sugar is diluted. Bring to a boil and boil for ONLY 3
    MINUTES. Gently pick out petals and blossoms. Strain into jars and
    seal.

    The ratio of sugar to water sound wrong to me. When I make cocktail
    syrups I generally use a 1:1 ratio up to 3:2.

    I did not know it was a tree either until a recent tour we went on. We
    were with a local guide on a swamp boat in Louisiana. There were two
    types of trees there, cypress and tupelo.

    Title: HONEYED SCALLOP AND CHILLI STIR-FRY

    Yield: 4 Servings

    3 ts Oil
    1 md Onion (120g), quartered
    2 md Red peppers (300g), thinly
    - sliced
    1 lg Stick celery (100g), sliced
    100 g Snow peas
    200 g Scallops
    1 tb Honey
    1 ts Chilli sauce
    2 ts Chopped fresh mint

    Heat oil in frying pan or wok, add vegetables to pan, stir-fry over
    high heat for about 1 min. Add scallops, honey, chilli sauce and
    mint to pan, stir-fry for about 2 mins or until scallops are tender.
