If it was gamey tasting you probably had mutton or something close
to it in age.
Definitions of what is lamb vary from country to country.
In Canada lamb is under 12 months in age. Animals between 12 and 24
months can be called yearling lamb. Anything older than that is
called mutton and seldom seen in stores.
Britain, Australia and New Zealand call that intermediate age range
from 12-24 months hogget or "two tooth".
In the US prime and choice lamb is under 14 months and anything
older than that can be labelled just "lamb".
Further to that, in Canada baby or milk fed lamb is 4-6 weeks old,
young lamb 6-8 weeks old and spring lamb 2-6 months old.
Mutton can come from either ewes (females) or withers (castrated
males similar to steers). Ram meat is very strong tasting and hardly
ever eaten. My buddy "Dutch Farmer Bill" discovered that an infertile
ewe that has never been bred successfully will still taste mild and
lamblike even if quite old.

Yield: 6 Servings
400 g Ricotta;fresh
60 ml Frangelico liqueur
100 ml Cream
2 tb Sugar- castor
2 Mandarins; zest of OR
1 zest of an orange
Strawberries; halved
Orange flower water
Gently combine all the ingredients. Halve the berries & sprinkle
with a little orange flower water & icing sugar. Serve over cake
or dessert of choice.
