What you call Canadian bacon doesn't exist here.
American "Canadian" bacon is cured pork loin, trimmed of all fat,
sometimes smoked, pressed into a perfect round shape, fully cooked,
then sliced. It looks like a really lean pressed ham roll.

Our loin bacon is called back bacon. It is cured but not smoked and
sold raw. It has a bit of fat and remains in its natural boneless
pork chop shape.

And if a trimmed, cured, unsmoked, raw loin is rolled in cornmeal
it's called peameal bacon. (Coarse ground meal made from yellow peas
was used in the past.)
