    She had a red Beemer sports car last time we
    tooled about the countryside together. People
    don't take her too seriously, but in fact she
    was a pretty major intellect in her day. Further,
    she was smart enough not to wear out her tires.
    IOW she knew how to drive. That explains the red BMW; around me the real idjuts tend to drive black Audis.

    Marinated Heirloom Tomato Caprese Avocado Salad
    categories: salad, brown, Rhode Islander
    servings: 4

    4 c heirloom cherry tomatoes, halved
    2 Tb olive oil
    1 Tb balsamic vinegar
    1/2 c fresh basil, chopped
    1 Tb dried oregano
    1/2 Tb dried parsley
    1/4 Tb dried tarragon
    1/2 ts salt
    1/2 ts ground black pepper
    3 c pearl buffalo mozzarella
    1 lg avocado, chopped into cubes

    Mix cherry tomatoes with olive oil, vinegar,
    basil, oregano, parsley, tarragon, salt, and
    pepper in a small bowl. Allow to marinate in
    the refrigerator for 30 to 60 min. Afterward,
    stir in mozzarella and avocado. Serve fresh
    with fresh basil.

    Red cars are supposed to improve your odds ... of being pulled over.
    No one thinks my car will go fast enough to bother checking it!

    It was listed as a Rhode Island recipe, so it's fitting.
