    So the healthiest way to prepare them is to steam them in their skins
    or boil them and save the cooking water for soups, gravies and breadmaking.
    From that info it would seem that eating them raw
    might be a good idea, but then there are those
    solanine alkaloids to worry about (I don't worry
    about them but don't eat many potatoes to begin with).
    ...and even raw diet afficionados don't eat raw potatoes. Jicama yes, potatoes no.

    I've read sufficient contradictory stuff
    in the last couple days to want to try them
    for myself, perhaps in the form of salad.

    Still, I prefer to pan fry, deep fry, roast and bake them much of
    the time.
    For me, crisp and greasy are the only positive
    features of a potato.
    How about mashed with plenty of heavy cream and chives? Better yet of course, fried leftovers of same.

    That last latkelike incarnation would probably
    appeal to me but not suit my system.

    Raw potato salad
    categories: raw, vegetarian, salad
    servings: 2 to 4

    2 raw potatoes, grated
    1/2 c cream
    2 Tb tomato ketchup
    1 Tb white vinegar
    2 Tb sugar
    2 ts spicy relish
    1 ts minced white onion
    1/4 ts salt
    1/4 ts black pepper

    [Soak potatoes in water for at least 30 min.
    Rinse and drain.]

    Combine all the [dressing] ingredients and mix
    well. [Toss potatoes in dressing.] Place in a covered
    container and refrigerate 2 hr. Serve chilled.

    Lots of Irish joined the British armed forces, back when.

    I'll let you. I tried raw potato once out of curiosity. Didn't do it
    twice.

    There were a pile of them in the Army. Lots took the "King's
    shilling" to get the heck out of dodge.
