Maybe it was a large truck that hit it, then... or don't they usually
    take that sort of road...?

Oddly enough I hope it was a truck, they normally have a protective
bumper for moose on them. Going south from Anchorage trucks don't

One odd thing that we have noticed here is that whenever we see large
road kill, it is almost always off on the side of the road. Only once
or twice have we seen deer smashed in the road as opposed to being on
the shoulder. I suspect that some kind soul stops and drags them off
until the county comes to collect the carcass. I doubt that the car
that hit them knocked them over there, but it is possible.

My dad would often make a meal out of well cooked navy beans with a
thick broth/gravy and served over bread. This sounds similar.

I can confirm from experience that a deer hit by a car will skid to the shoulder of the road... I'd always suspected, like you, that someone had
moved them from the road.... but when it actually happened, the deer ran
just in front of the car on my side of the car, and the impact sent it
skidding back on its side to the shoulder of the road that it had come
from.... Broke the (very thick) glass of my left front headlight, and
did damage to other parts of the front... It was stunned only, though,
as when my sister (it happened just down the road from her house) went
looking for it a little later, it was nowhere to be found...

The smashed ones in the road are more likely to have been hit by
    something bigger.... ;)
