    Chicken enchilada soup
    categories: semi-homemade, poultry
    servings: 6 to 8

    2 ts olive oil
    1 lb chicken breast, 1/2" cubes
    1 sm onion, finely chopped
    2 cloves garlic, minced
    1 cn (10 oz) enchilada sauce
    2 c reduced-sodium chicken stock
    1 c (10 oz) diced tomatoes with green chiles
    2 cn (15 oz ea) Southwestern Bean Salad
    salt and pepper to taste
    crispy tortilla strips (opt)
    shredded cheddar cheese (opt)
    diced avocado (opt)

    In large saucepan or Dutch oven, heat olive oil
    over medium-high heat. Add chicken and onion.
    Cook until chicken is browned and onions are
    soft, stirring occasionally. Add garlic; cook
    1 min, until fragrant. Stir in enchilada sauce,
    chicken stock, tomatoes, and bean salad. Bring
    to boil. Reduce heat and simmer 10 min. Season
    with salt and pepper to taste. Serve with
    tortilla strips, cheese and avocado, if desired.

    out back in the day but.................

    Especially when they saw where the art was taking me. Didn't go the
    drawing and painting route (except for one class) but have done well
    with needle and thread.

    It's hard to cruise thru something like a voice major when you have a
    good, but not great voice. Also hard to cruise thru academics when you
    have to work hard for decent grades.

    Looks good--I'm sure we could use flour tortilla strips instead of corn,
