    Look for Epoisses - it may be more expensive,
    but it's famous enough so you might find it.
    I also find it better.
    It is far more expensive but it is available at the little fine food
    store that Chef Pierre started which the landlord inherited and now
    runs. And yes it is the very best of that style.

    Speaking of which, how does the landlord managing
    to make a go where Chef Lepage couldn't? And where
    is that worthy person now?

    You might be surprised.
    It just a random tagline. I've never tried making them; I always
    assumed they'd soak up too much oil and be soggy. Perhaps I should
    try it at least once.
    Fried eggplant
    It just so happens there is an eggplant in the fridge right now. It
    was originally meant to become ratatouille but ...

    I recommend the dish. You might do a two-stage 325/375
    (160/190) frying to get a thoroughly cooked inside and
    a crisp outside.

    Cocoa Nibs Citrus Salad
    categories: KfP, starter
    yield: 4 to 6 servings

    1 grapefruit, peeled (membrane removed, opt)
    2 navel oranges, peeled
    3 blood oranges, peeled
    4 clementines, peeled
    pomegranate syrup (opt)
    cocoa nibs, several Tb
    pistachios, roasted and chopped (or whole)

    Cut the fruit into bite-size pieces and place in a
    large serving bowl, preferably glass.

    Add the pomegranate syrup to taste.

    When ready to serve, sprinkle the cocoa nibs and
    roasted pistachios over the fruit salad.
