    As time grows closer, and we know who are likely showing up, I could probably encourage them to take advantage of Lydia's king-size bed....

    feet issue, which Burt has been prone to.

    least once more for lunch/supper before the picnic.... and at least will
    try to call them a few times... Burt asked to be kept in the loop via
    email, so they are planning to come anyway.... they aren't being silly
    this time and volunteering to host.... :)

    and what could we do now?

    yield: 1 batch

    4 c flour
    2 c cool water
    cold water to rinse

    Add water to flour in a bowl. Knead into a dough
    ball that holds its shape. Fill the bowl with water
    and soak for at least 20 min. (This will start to
    dissolve the starches in the flour.)

    Next place the soggy dough ball in a colander (not
    a strainer); turn on the cold water and rinse,
    squeeze, and repeat many times. You want to get as
    much of the starch and bran out as you can.

    Finally! You˙ve made a perfect little blob of sticky,
    almost pure gluten.
