    A possibility, but we would be heading up through
    prime Penn Dutch territory, wouldn't we, so there
    would be other interesting choices of a less
    chainy nature. If the spirit strikes, there is one
    on route in Lewisburg as well as other places.
    I don't know anything about Hoss restaurant, but would go on the reccomendation of you and others. We don't really go through Dutch territory, closest we get is York and that would be fairly early in the
    trip. Lewisburg and/or Williamsport would be more of a halfway stop.
    In any case, we'll figure it out then if you ride up with us.

    Yeah, well, York and Lebanon would be
    pretty early. But there will be plenty
    of Plain Folks' plain cooking in southern
    New York as well. We still have time to
    research this topic.

    I have various people clamoring for me to
    get my schedule set - Lilli, Bonnie, Glen,
    and even Swisher. I'll get it figured out
    at some point.

    Title: Mama's Baked Eggplant
    Categories: Side dish, Dish, Vegetable, Vegetarian
    1 Eggplant, medium, pared,
    -cubed
    1 c Onion, chopped
    1/2 c Cracker crumbs
    1 tb Sugar, granulated
    1 tb Butter, melted
    2 Eggs, beaten
    1/3 c Milk
    2 Bacon, slices
    -Salt
    -Pepper, black

    Boil eggplant and onion in small amount of salted water. Drain and
    mash. Add remaining ingredients, except bacon, mix well and turn into
    a buttered 1 1/2 quart casserole. Bake at 350 degrees for 30 minutes
    until firm. Top with bacon, return to oven and bake until bacon is

    I like the variation on vegetarianism
    embodied in this recipe, The boiled eggplant
    not so much. Nor the sugar and milk.

    Title: Kathy Pitts' Turkey and Cheese Sandwich
    Categories: Breads, Poultry, Cheese, Vegetarian
    Yield: 1 sandwich

    2 sl Whole grain bread
    1/2 Ripe avocado, sliced
    sl Smoked Monterey Jack or
    -smoked Gouda cheese
    Alfalfa sprouts
    Radish sprouts
    sl Very ripe tomato
    Olive oil
    Wine vinegar
    Fresh ground black pepper

    Here's one I invented a lot of years ago for a vegetarian friend.
    Not low fat, but it is good (what can I say, I'm originally from
    California).

    Lay the bread slices on a flat surface. Put half the avocado slices
    on each bread half. Top one bread half with the remaining
    ingredients, dressing this mess VERY LIGHTLY with oil and vinegar.
    Top with remaining avocado/bread half, and cut into quarters to serve.

    For a non-vegetarian version of this, I've added thin slices of smoked
    turkey.

    I've also made this by piling the whole mess into halves of pita
    bread, but if you can get good whole-grain bread, that's even better.
