    Plain scallops are $28; bacon is $6 and bacon wrapped scallops are
    $29. The scallops got marked up $1 and the bacon got marked up $23.

    I certainly am familiar with such. In many places they are called
    rumaki.

    Never anywhere I've eaten.

    Rumaki are also made with poultry liver.

    They are always made with chicken livers. Check out the guy who
    invented them ... Don the Beachcomber who started the Tiki bar
    phenomenon 3 years before Trader Vic made it famous. He's the guy who
    invented the pu-pu platter, the Zombie, and the Mai Tai along with
    Rumaki.

    Chicken livers wrapped in bacon are called Rumaki.

    Title: Broiled Scallops and Bacon Hors D'oeuvres
    Categories: Bacon, Scallops, Appetizers
    Yield: 4 servings

    1 lb Large sea scallops
    1/3 lb Bacon

    Remove any tough cartilage from the sides of the scallops, wipe
    off any bits of shell and pat them dry. In a large frying pan,
    partially cook bacon until it has released its fat but is still
    limp and flexible; remove it to brown paper or paper towels and
    drain it well. Cut the bacon pieces in halves or thirds so that
    they are just long enough to wrap around a scallop with a slight
    overlap. Wrap each scallop with a piece of bacon and secure the
    wrap with a toothpick. Place the wrapped scallops on a rack that
    is set in a baking pan and cook under a preheated broiler, turning
    once, just until the bacon is crisp and the scallops are opaque.
    Serve immediately.

    Variations: Roll the scallops in pancetta or prosciutto instead of
    bacon. Add something crunchy - drained water chestnuts, a length
    of scallion or a thin slice of kohlrabi - next to the scallop
    before rolling it in the bacon.

    Neither got marked up at all. The extra dollar is for the labour in pre-assembling the dish. Bv)=

    That may be true - but a restaurateur will file the serial numbers off
    of anything and sell it for a profit. Scallops and poultry liver are not
    the only things offered as rumaki appetisers in the places I visit.

    Title: A Different Sort of Rumaki
    Categories: Appetizers, Bbq, Shellfish, Chilies
    Yield: 1 Servings

    md Size prawns; fresh
    Pepper Bacon (really really
    - it makes a difference)
    Full large head of garlic
    Several lemons and limes
    1 1/2 ts Dried red pepper

    Peel and devein the shrimp. Marinate them with all the
    garlic (peeled and crushed), the red pepper and enough
    of equal amounts of fresh lime and lemon juice to cover
    all the shrimp. Marinate in the 'fridge for 3-6 hours.
    I usually do this in the morning and let them go all
    day.

    After marinating, drain the shrimp (If you are grilling
    outside I recommend that you save the marinade and baste
    with it) and cut the bacon strips in half. Wrap the
    bacon around the shrimp and secure with a toothpick.
    Either grill over mesquite basting with the reserved
    marinade (the favored method) or broil in the oven.
    You may pre-grill these and refrigerate, then warm
    in the broiler prior to serving. In fact, I think
    they even taste better that way!

    NOTE: Marinading the shrimp/prawns in the citrus
    cooks them as it would if you were making a ceviche.

    Sure. But not one that called bacon wrapped scallops rumaki.

    I have seen scallop rumaki and shrimp rumaki in addition to the usual
    chicken liver versions in Illinois, Oklahoma (Tulsa and Oklahoma City),
    Texas, California, Colorado and Florida. You seem to be pretty much
    confined to the provinces of Canadia.

    Title: Make Believe Rumaki
    Categories: Appetisers, Fruits, Cheese, Pork
    Yield: 20 Appetisers

    20 lg Dates; pitted
    10 Water chestnuts; halved
    5 sl Cheddar cheese; each in 4
    - pieces
    5 sl Bacon; each in 4 pieces
    1/2 c Kikkoman teriyaki sauce
    Sliced tomatoes & cucumbers
    - (opt)

    Slice dates but do not cut all the way through.

    Insert into each date, 1 slice each water chestnut and
    cheese. Wrap each date with a piece of bacon. Secure with
    a toothpick. Dip dates into teriyaki sauce. Place on
    lightly oiled baked sheet.

    Bake at 450°F/232°C or under broiler for 10 to 15 minutes
    or until bacon is crisp.

    Serve immediately with sliced tomatoes and cucumbers, if
    desired.
