Quoting Nancy Backus to Michael Loo <=-
Not sure what kamut is, but probably another grain...?
Yep. It's a grain species in the same genus as common bread wheat
that was pretty obscure until recent years when the premium priced
health food industry started promoting it, along with spelt, emmer
and einkorn.
Durum, another wheat species, makes the best pasta, so why mess
around with substitutes?
MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: Basic Fresh Pasta Dough
Categories: Pasta
Yield: 4 servings
1 c Unbleached flour
1 c Semolina or durum flour
1 ts Salt
1 tb Olive oil
3 Eggs; beaten
Place all ingredients except egg into a food processor. Add the
egg a bit at a time while pulsing. When the dough forms into
pellets, you've added enough eggs. Turn the dough onto a work
surface and knead together into a stiff mass. Let rest for 15
minutes before rolling into pasta.
