knee.
I wonder if Dale looked for lamb or pork shank at his Wegmans yet...
Nope -- and before I would try to cook them at home, I'd want to have
that dish out some place.

Title: Tocana de Vita(Romanian Beef Stew)
Categories: Beef
Yield: 6 servings
1 lb Beef for stew
1 c Minced onion
1/2 ts Paprika
1 ts Salt
2 ts Minced green pepper
1 tb Flour
1 tb Fat
Garlic bud
1/4 ts Pepper
1 c Water
2 c Diced potatoes
1/2 c Cold water
Wash the meat in cold water,then let stand in the same. Brown onions
in fat, add paprika and mix well. Add the meat, pepper, salt and
garlic. Mix well, cover and let simmer for about 40 minutes. Add the
boiling water, green pepper and again let simmer for about 20
minutes. Mix the flour with the 1/2 cup cold water, add slowly to the
meat and mix well. Simmer for about 2 minutes, then set the stew
aside.
Place diced potatoed in salted water, bring to a boil and let boil
for 5 minutes. Remove potatoes from hot water and place in stew;
bring to a boil and simmer gently for about 5 minutes.
Serve very hot.
SUGGESTIONS: Use bacon grease or butter for fat. Use beef chuck,
shank or neck; or use veal shank or neck; cut in bite size pieces.
Let the meat stand in ice cold water for a while. From: Mark Miklas
