    This is one of my own recipies.

    Enchilada Casserole
    -------------------
    Serves: 4
    Oven: 400F
    2qt Casserole
    Bake Time: 20 min.
    ------------------
    Ingrdients:

    1# Ground Beef
    1 can Enchilada Sauce
    sm can diced Jalapeno
    10" Flour Tortillas
    Shreded Chedder
    sm can minced black olives
    Sour Cream
    ------------------
    Directions:

    Brown and drain the ground beef and return to pan.
    Add sauce, peppers and olives.
    mix well and heat through.
    butter one tortilla and place in casserole butter side down.
    add small amount of meat mix and spread over tortilla.
    cover with cheese and place next tortilla on top.
    continue in layers with meat mix and cheese being on top.
    cover the dish with the lid and bake for 20 minutes
    remove from oven and let rest for 5 minutes before serving.
    Serve with sour cream.

    Welcome back. You showed me yours so I'll show you mine. Similar but
    different. I've used shredded chicken, pulled pork and actual carnitas
    in place of the hamburger. El Pato tomato sauce (if you can find it)
    makes things nicely zippy. Anyway it was Saturday night's supper.

    Title: Enchilada Pie
    Categories: Latino, Beef, Sauces, Cheese, Breads
    Yield: 3 Servings

    10 (6" - 8") tortillas
    1 lb Ground beef
    1 sm Onion; chopped
    1 ts Salt
    1/4 ts Pepper
    1/4 ts Oregano
    1/4 ts Cumin
    20 oz Red enchilada sauce
    8 oz Tomato sauce
    1 c Cheese; grated

    Brown meat and onion. Drain. Add spices and sauces.

    Mix and stir until it is hot. Tear tortillas into strips
    (stale tortillas work fine in this recipe).

    In a casserole, layer strips, sauce, cheese 2 or three
    times, ending with cheese.

    Bake @ 350°F/175°C about 1/2 hour.

    Title: Breakfast Burritos
    Categories: Tortillas, Eggs, Sausage, Chilies, Cheese
    Yield: 4 Servings

    2 md Potatoes, cubed
    1 lb Pork sausage, cooked and
    Drained
    1/2 Onion, finely chopped
    5 Beaten eggs
    1 Green or red bell pepper
    1 lg Can whole green chiles
    2 c Grated cheddar cheese
    1 cn Sliced black olives
    1 pk 8-12 inch flour tortillas
    2 x 15oz cans Stokes Green Chili

    Cook potatoes and chopped onions in a large lightly oiled (olive
    oil) skillet. When done add pork sausage and green pepper. Cook
    until it's warm and peppers are cooked. Add beaten eggs. Stir
    until eggs are done. Warm tortillas on the stove or in the
    microwave (25 sec). Slice whole green chiles in half, clean out
    seeds and place one on each tortilla. Add egg, potato & sausage
    mixture in tortilla along with a little grated cheese. Roll
    tortilla up and place seam side down on a plate. Spoon warm Stokes
    Green Chili over burrito. Add grated cheese and sliced black
    olives on top.

    Optional: Salsa and Green Pepper Tabasco Sauce can be served with
    it for added flavor. Very filling and makes 4-6 large servings.
