She can generally eat what she wants but avoids such things as a
3 piece KFC dinner with fries

But I have not had to change what I eat at all.
Perhaps we just naturally eat a lower fat diet, but even a
healthy dose of southern fried chicken during a tour in
    Tennessee did not bother me.

I have noticed your natural propensity for lean ground beef and
skinless chicken breats. She is the same way, so she did not have to
radically change her diet. She is quite content with at most two
pieces of fried chicken at a meal and forgoing the fries.

    ---------- Recipe via Meal-Master (tm) v8.06

We did that here for a while right after Roslind's ball bladder
    surgery
    *gall
assuming that "ball" is a typo for "gall"
    It was.
She can generally eat what she wants but avoids such things as a
3 piece KFC dinner with fries, which would not sit well with her.
Actually she avoids french fries in general.

After my gall bladder was removed, I did read that its function had to
do with the digestion of fats in the diet (side note: Michael and
Nancy be warned). But I have not had to change what I eat at all.

The reality for me is that, even though my gallbladder was removed back
in 1995, I've had no issues with digesting fats... the gallbladder,
which stored bile for fat digestion, is no more, but the liver is still producing bile, and regularly dumping it into the intestines, so the
function is only modified, not missing... :) I've never really had any
issue with fat digestion, with or without the gallbladder....

Perhaps we just naturally eat a lower fat diet, but even a healthy dose
of southern fried chicken during a tour in Tennessee did not bother me.
I think that we had it three or four times in the week long trip.

Apparently your body is also producing sufficient bile... :) In this,
as in many other health issues, it turns out that each person is a
little different... and what is "known" is often an average only, and
doesn't always apply in all cases.... :)

I have much less a natural propensity for lean beef and skinless white
meat chicken... yet I've also had no need to radically change my diet
without my gallbladder... I never had the classic symptoms of
gallstones, just general abdominal pain, not dependent on anything I'd
eaten or not.... but it turned out that I had large stones, so out the gallbladder went... I still have sufficient bile production, so I'm
still digesting fats just fine... That said, I've not been that much of
a fan of fries, nor gorge on fried chicken... only have the latter once
in a while, and mostly chicken thighs... ;)
