    I checked with Lydia, and she says you can park the camper in the
    yard, she can hook you up with electric and water, just not sewer...
    She's offered her house for the picnic, including putting people
    up in
    her house... ;) She's out in the country... and most probably closer
    to Newark than the church was, last time...
    That sounds like very good news. I guess that makes the picnic and
    date official. September 7 to 9, Bloomfield NY, which I make as
    being
    about 25 miles/35 minutes from Newark.
    That sounds likely... time would depend on how one went and what the
    traffic was like....

    So let's do a roll call - definites and likelies.

    She ran down what she had for beds, and silly me, I didn't write it
    down... so I'm still a little fuzzy... But it sounded like probably a
    half dozen or more, depending on bedding/rooming requirements... I'll
    ask her again, and this time make better notes... ;)

    MMMMM----- Recipe via Meal-Master (tm) v7.04

    Title: GREEN CORN TAMALES
    Categories: Mexican
    Servings: 24

    12 Ears of fresh white or 1/2 c (scant) sugar
    Yellow corn 1/4 c Light cream, or more
    1 lb Monterrey Jack cheese, 2 Green chiles, parched
    and
    Grated Peeled
    1 lb Pure lard 1 lb Cheddar or Longhorn
    cheese
    1/2 lb Butter Salt

    1. Chop stalk end of each ear of corn flush with the base of the ear.
    Shuck, being careful to keep corn husks intact for later use. Wash husks,
    and drain.

    2. Cut corn off cobs. Grind corn with the Jack cheese in a meat
    grinder, blender or food processor.

    3. Cream lard and butter to a smooth and fluffy consistency with an
    electric mixer at medium speed. Add the ground corn and cheese mixture,
    sugar, cream and salt to taste. Continue to mix with the electric mixer
    until mixture looks like whipped cream. Add more cream if mixture is dry.

    4. Cut the roasted green chiles into long strips. Spread about 2
    tablespoons of the corn mixture on each corn husk. Spread mixture out
    into
    a rectangle and allow at least 2 inches of husk to extend below the corn
    mixture and a few inches of margin on both sides of the husk. Place about
    2
    strips of green chile down the center of the corn mixture, then sprinkle
    with a few pinches of the grated Cheddar cheese.

    5. Hold the two sides of the tamale together to make the corn mixture
    fold up around the filling. Then tuck one edge of the husk over the top
    of
    the tamale and roll, tying the ends with strips of corn husks. If
    preferred, the bottom end of the husk can be folded up before rolling. If
    you plan to freeze the tamales, freeze them at this point.

    6. Place the tamales upright on a rack in a pressure cooker or large
    steaming kettle. Before the rack is completely filled with tamales, pour
    1
    to 2 cups water into the bottom of the pan, about 1/2 inch deep.

    7. Steam at 15 lbs pressure for 25 minutes, or in a conventional
    steamer for 45 minutes. Serve warm with Green Chile Sauce, plain, or
    with
    beef, pork or chicken added. These may be kept in the refrigerator for 3
    to 4 days.

    Makes 24 tamales.

    Freezing Hint: Package tamales in plastic bags, 12 per package
    or other suitable quantity. If packaging large
    quantities, keep track of the contents on a
    card. Maximum Recommended Freezer Storage: 1 year

    We'll be there for all three days (or more). Depending, we could stay
    at a hotel, at Lydia's or at a nearby AirBnB. We will have our car and
    can provide transport to any events in the area, and to you going to or

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Beefsteak and Kidney Pie
    Categories: President, Meat, Pie
    Yield: 8 servings

    4 sm Veal or Baby Beef Kidneys
    1 1/2 lb Rump or Round Steak (to be
    -cut into 1" pieces
    1 c Claret or other Dry Red Wine
    2 Onions, 1 sliced; 1 diced
    2 Bay Leaves
    1/2 c Parsley, chopped
    1/2 c Celery, chopped (including
    -tender leafy tops)
    1 c Mushrooms, sliced
    Suet or Bacon Drippings
    Flour for dredging and
    -thickening
    1 pt Hot Water
    Salt
    1 ts Coarse Black Pepper
    1 ts Marjoram
    Pastry of puff-paste, pie
    -crust, or biscuit dough (to
    -cover casserole)

    Separate the kidneys with a sharp knife, discarding all gristly
    portions and fat. Sprinkle with salt. Cover with claret, add bay
    leaves, sliced onion, pepper. Let it marinate 2 hours.
    Pound the steak with flour, and cut into 1" pieces. Brown suet
    or heat bacon drippings in iron skillet. Then add diced onion and
    cook until clear; remove onion from skillet.
    Over medium heat, brown steak well. Next drain the kidneys,
    reserving the marinade; dredge with flour, and brown, stirring
    carefully. Add 1 pt or less or hot water, stir well, add chopped
    celery and parsley, and marjoram.
    Mix all well, and transfer to the casserole from which you
    intend to serve the pie. Strain into it the marinade. Cover with a
    tight lid, and bake at 325øF for about 1 hour.
    Remove from oven. Brown the mushrooms in bacon drippings, and if
    they need thickening, thicken with flour mixed in cold water and
    stirred carefully to avoid lumps. Add the mushrooms to the casserole
    mixture. Cover with a crust of puff-paste, pie crust, or biscuit
    dough, and return to 400øF oven, and bake until brown, about 20 to 30
    minutes. Serve at once.

    Pretty sure we'll be there, barring emergencies. We'll have the camper,
    will stay in it but will do meals, etc with the group.

    Definite for the whole weekend... I suggested to Lydia that people might
    be arriving on Thursday, and not leaving until Monday, and that was fine
    with her... She's offering to have homemade soup available for arrivees,
    and serving breakfast Friday morning...

    Also, she said she could go sleep on the other side of the house with
    her daughter (what used to be the apartment for our parents), and free
    up her king waterbed for another couple of guests...

    It sounds to me as though we should be able to accommodate everyone
    there, especially as Hafflys will have their camper there for
    themselves... There's also a couple of couches.... ;)

I've got several projects down at the lake to get done, work
    on a long trip to Europe with a travel agent, and then it's off to Arizona for the winter, as soon as I book it, plus arrange to get all the stuff I brought up here, back down there. Which means fly into Las Vegas (closest airport to Lake Havasu), probably around Halloween, and then spending the first week looking for a used car across a couple of states. Then I can go to Lake Havasu
    and do something with that pile of stuff that I had redeposited.

    Besides, I don't cook. Well I do, sorta. A success means that I'm willing to eat it, and I have terrible tastes.

    Title: BURT'S BEEF STEW
    Categories: None, Beef
    Yield: 4 Servings

    3 sl Bacon -- cut in small
    Pieces
    4 tb Flour
    1/4 ts Pepper
    2 lb Lean beef (I like chuck) cut
    In chunks
    1 lg Onion -- chopped
    2 Cloves garlic -- minced
    1 (28 oz.) can tomato sauce
    1 c Beef broth
    1 c Dry red wine
    1 Bay
    1 pn Thyme
    4 Carrots -- cut up coarsely
    2 Stalks celery -- cut up
    Coarsely
    4 lg Potatoes -- peeled and cut
    In 4
    10 To 12 mushrooms -- sliced
    Leaf -- optional

    In a large pot or Dutch oven, cook bacon until light brown. Combine
    the flour and pepper in a bowl, dip the meat in the flour mixture to
    coat completely. Brown in bacon fat, turning often. Add a little
    vegetable oil if needed. Add onion and garlic and brown them a
    little.

    Add tomato sauce, broth, wine, bay leaf, and thyme. Cover and cook
    slowly for about 1 1/2 hours. Add carrots, celery, then potatoes and
    mushrooms. Cook, covered, another 1/2 hour. or until vegetables are
    tender. Serve with hot Italian bread, a large salad, fine wine, and
    good friends.

    Yeah, this year, i.e. summer, I even hope to murder a few fish, I won't eat them but I've been giving them to people who do and can't fish. I'm now in a building full of senior citizens, many of whom are in walkers, and others who don't drive. Last year I couldn't stand for more than a few minutes, so I sat a lot. OK, basically I didn't do much except sit, a lot, since walking wasn't much of an enjoyable experience either.
