    The good thing is the closer the knife to my eyes, the
    more effectively it can be wielded.

    Considering our styles of cooking are so antithetical, it's a
    bit of
    a surprise that in years past we managed to do pretty well in the same kitchen. This year he didn't let any of us help at all,
    though.
    Intent on just doing it himself, eh...?

    Maybe it's just that he feels like it might not be possible to do it all himself for all that much longer....? And wanted to do it while he
    still could...?

    the sous-viding process anyway.

    Luckily, Lilli and Bonnie appreciate the contributions of hidden
    fat, though both are scanty in their approval of big blobs of it. Rosemary turns a blind eye but notes that if I'm visiting for more than a week, she gains weight. Swisher doesn't seem to care.
    Fat doesn't seem to make me gain weight...
    My idea is that there's a substantial proportion of the
    population that is more like us.

    There are the traditional children's book illustrations of
    Jack Sprat and his wife, where Jack is skinny and she is
    plump, but if Jack ate a lot of starchy nonsense, that could
    easily not have been a reflection of any potential reality.

    That may be true, but fatty sausages are certainly healthier
    than zucchini, at least as far as mental wellness goes.

    Gourd Luffa and Beef Tongue Stir Fry
    Categories: odd, breakfast, main, paleo
    Serves: 2 to 3

    1 1/2 c cooked beef (or lamb) tongue, diced
    2 c gourd luffa, ridges removed
    1 md carrot, peeled and sliced
    2 Tb coconut aminos
    3 Tb solid cooking fat, divided
    1 sm yellow onion, chopped
    3 garlic cloves, minced
    1 in ginger root, grated
    fresh thyme for garnish
    1/2 ts sea salt or to taste

    In a nonstick frying pan preheat 2 Tb fat. Add carrots
    and cook, stirring, for 5 min over medium heat until
    slightly golden on both sides. Add the gourd luffa,
    stir, and cook 5 more min. Add the onion and cook
    another 5 min, stirring. Add the garlic and ginger
    and cook until fragrant, about 1 min.

    Add the remaining 1 Tb fat, coconut aminos, sea salt
    and diced meat, stir well and cook for 3 to 5 min.
    Garnish with fresh thyme and serve.

    You can use zucchini instead of gourd luffa if the
    latter not available in your area.

    Probably a good thing, then, that he did it all himself... :) Hmmm, I
    seem to remember that there had been some talk of Steve showing off his soud-vide stuff at the picnic... guess he just had too many other things
    for show and tell... :)

    Very true... and the statement that between them both they licked the
    platter clean could as easily have been if he ate starch and she
    didn't, as the fat that was claimed... :)

    But then it would be zucchini and tongue instead of gourd luffa... I'm
    sure you'd find it awful, not offal... Even I'd be inclined just to
    leave it out.... ;)
