    Hi. Not much to say about me really. I'm John and I share an unpopular opinion about Tim Horton's coffee being mediocre. Also I can follow a recipe and avoid burning food. Mostly.

    others of us are... some of us are more Eats, and just enjoy talking
    about food... I used to cook fancier than I do now... now it's rather
    simple fare most of the time... But I do enjoy watching other people
    cook... :)

    Sauces are easy if you pay attention to a few details. Like, taking a
    page from the French and using lots of butter. This is one I make for
    chicken - although I seldom do white meat. But, it works as well for breasts/wings as it does for leg quarters. My local Walgreens has been
    carrying splits (175ml) of Ernie and Julie (E&J Gallo wineries) which
    is not my preferred drink - it is better than "cooking" wine and works
    well in sauces, etc.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Red Wine Sauce For Chicken
    Categories: Sauces, Vegetables, Wine
    Yield: 3 servings

    2 tb Butter; unsalted
    1 tb Minced garlic
    3 md Sweet onion; diced fine
    1 tb Paprika
    1/4 c Light brown sugar
    1/2 c Chicken broth or stock
    1 c Red wine; pinot noir or
    - burgundy
    1/4 ts Salt
    Salt & pepper

    Melt butter in the skillet over medium heat. Sweat the
    onion and garlic until translucent.

    Add the flour and paprika and cook, stirring, 1 minute.

    Add the chicken broth and bring to a simmer, whisking.

    Add the wine, sugar and 1/4 teaspoon salt and simmer
    until the sauce is reduced by half, about 10 minutes.
    Season with salt and pepper.

    If the sauce thickens too much thin it by adding more
    unsalted butter to get the desired consistency.

    UDD Note: To use this on pork or roast beef add 2 tb
    Dijon-style mustard before reducing the sauce.

    Yes it's a trailer... there is no insulation, and I just did a 14 hour
    shift and had my car fail at the gas station, and I will run the furnace
    all damn night and sweat like a pig if I want to!

    Yup, ours dropped like that, too... still is pretty chilly, but at least
    the house is well insulated... we took advantage of the coolth to cool
    off the house for the first few days... ;) Had the window open around
    the clock until I closed it last night when it was getting a little too
    cool... ;)

    [laugh] I'd say you'd be entitled... ;) We had a church retreat
    Saturday, on top of Bristol Hill in Naples, in a state park... we had a
    lodge, but for the teaching part the adults were sitting outside on the
    porch of the lodge... some were almost dressed for the weather, but it
    was not only much cooler than it had been but also there was fog and a
    cold breeze blowing... Emergency blankets came out from cars, and we all survived... ;)

    Just as well... (G) At least we had decent food for the retreat (served inside), brought in by some of the members... Morning snacks included my sister's famous crescent rolls, some sweet, at least one savory, with
    the frosting that makes them even nicer... and she'd also made a pot of
    hot cocoa, served with freshly whipped cream... There was also fresh
    fruit and a gluten free coffee cake... and the usual coffee.. ;)

    Lunch was make your own tacos, with a choice of flour tortillas or corn
    taco shells, a choice of pulled chicken taco meat, beef taco meat with
    beans and tomatoes or plain beef taco meat... and a crock pot of rice
    and black beans... toppings included shredded cheddar cheese, sliced
    black olives, lettuce, sliced avocado, chopped fresh tomatoes, salsa,
    sour cream... there were also tortilla chips of some sort, which I
    didn't even try...

    Afternoon snacks before we went home included what was left of my
    sister's rolls and some other baked goodies...
