    Research Park Triangle. There's a heavy Indian (from India) presence in
    the area in addition to the Mexican, Native American, "American blend",
    etc. Education level varies from area to area. The concentration of
    Indians are usually highly educated but there are also areas of poverty.

    Do you have an Indian market nearby? One feature of the
    Shipps' picnics has been a visit to one of the various
    ones in the area.

    Another factor is that there are a lot of non native North Carolinians, people who have moved from other states for various reasons--all in all,
    adds up to some interesting demographics. That, as much as anything,
    accounts for the variety of grocery brands.

    But what makes so many companies think they can carve
    out a niche or even dominate, that's the question. One
    thing I noticed was that the Publix prices were very
    high compared to what I know from both Massachusetts
    (college town city) and California (distinctly not so).

    In order to make sushi a paying proposition in the supermarkets,
    there have to be preservatives. I'd suggest that allergenic
    chemicals are a lesser evil than fish cut a day or more in advance.
    I know, but try to talk him into getting some sushi other than at Fu's
    is almost a lost cause. (G)

    Speaking of which, we saw a place called something like New Tokyo
    on rte 1 in the town north of you - any good?
    Never tried it. We usually go thru the area only on our way up north or
    on our way home--times we're not looking for a meal. Also, tho I've seen
    it quite often it usually has looked closed--don't know if it is or not. Guess we'll have to check it out.

    My eyes being what they are, just noticing the sign was a
    bit of a triumph. Anyhow, if it was any good, you'd have
    probably heard that by now.

    Crispy Parmesan Garlic Chicken with Zucchini
    Categories: poultry, main, Italianate, Californian
    Servings: 4

    2 chicken breasts, sliced in half, or 4 thin chicken breasts
    8 Tb butter, divided
    1/2 c Italian breadcrumbs
    4 1/2 oz grated parmesan, divided
    1/4 c flour
    2 md zucchini sliced
    2 garlic cloves minced

    Melt 2 Tb butter in a large skillet.

    Melt 4 Tb butter in a shallow dish. In another shallow dish
    combine breadcrumbs, 4 oz parmesan, and flour. Dip the chicken
    in the butter and then coat in the crumb mixture and place in
    skillet. Cook on each side for 3 to 4 min until the outside is
    crispy and the chicken is cooked throughout. Set aside on plate.

    Add 2 Tb butter back to the skillet and saute the minced garlic
    for 1 min. Add the zucchini to the skillet and saute until
    tender. Salt and pepper to taste and add 1 Tb parmesan. Add the
    chicken back to the skillet and heat 1 min. Serve immediately.

    We have quite the concentration of colleges and universities in the
    area. Besides the top 3, there are a number of other schools--Shaw,
    William Peace and St. Augustine's are all universities. Meridith is a
    college (don't think they're fully co-ed yet) with Master's level
    programs as well as undergrad and Wake Tech is a (large) 2 year school.
    All those students get hungry. (G)

    There are several in the Raleigh/Cary/Morrisville area but we've not
    checked any out yet.

    Publix is on the higher end of pricing around here but the quality is a
    lot better than some of the stores. We think it's pretty much in line
    with Harris Teeter, have to check it out with Wegman's as they settle
    into the area. We spent a couple of hours exploring the new Wegman's
    store today--very much like the Columbia one.

    We've not heard anything about it in the 10 years we've been in this
    area. I think it's been closed the entire time we've been here.

    I looked at the label and did not see any preservatives. They were
    preparing it fresh as we watched. We got one from the case, apparently
    prepared shortly before. We got a Firecracker Shrimp Roll.
    Unfortunately, the ingredients part of the label went into the trash or
    I would list them. It is a cooked variety. I won't say it was as good as
    Fu's, but it was good, much better than some I have had elsewhere. I
    would definitely go back and try more from there now. It is a lot easier
    for us to get there than to Taste of Japan.

    I've had that at least once, and would agree that it is a decent roll...
    also I've tried some of their tuna rolls, and their king salmon poke
    bowl, among others (yes, a number of their raw offerings)... as I've
    said, they are quite passable... :)

    It is a lot easier for us to get there than to Taste of Japan.
